Cauliflower Confetti Pasta
--3/4 cup medium shell noodles
--several chunks of cauliflower
--handful of spinach
--1/2 cup shredded vegan mozzarella cheese
Add the shell noodles and cauliflower to boiling water; lower heat. Add spinach when noodles are almost done. Cook for about five minutes more and then drain out the water. Add in the vegan cheese and spaghetti sauce (about 4-6 spoonfuls, depending on how saucy you want it to be). Stir up the mixture, breaking up the cauliflower into tiny "confetti" pieces. Let simmer on low heat until mozzarella cheese is nice and melty. Serve with garlic salt sprinkled atop.
