Plain Ol' Hummus

My new recipe this week was the plain ol' hummus from Quick and Easy Vegan Comfort Food. It's a simple recipe, but preparing it proved to be quite the adventure.


The recipe says to process all the ingredients together in a food processor, so I dug mine out and set it up and added in all the ingredients. Well, it turns out it's actually a mini food processor, and I wasn't paying attention and accidentally went over the liquid fill line, and all the lemon juice and water started leaking out of the bowl before I could even start the processor. So, that was exciting... and messy...

By the time I got all that cleaned up and processed it in two batches to avoid further spills, I realized I should have drained the chickpeas (garbanzo beans) because the resulting hummus was way too watery, even with some of the water having leaked out. (I didn't drain them because the recipe didn't specify, and in other recipes in this cookbook, it's been noted when to drain & rinse canned beans.) But I gave the hummus a try anyway, and in addition to being watery, there was too much cumin.

So, yesterday, I tried the recipe again, making some changes: I drained & rinsed the chickpeas, used only ¼ tsp cumin (instead of 1 ¼ tsp cumin) and just a dash of pepper (instead of 1/8 tsp), and blended these and the rest of the ingredients (tahini, flax oil, lemon juice, garlic cloves, salt) in a blender (instead of my mini food processor). This time, it was a delicious success; I had some of the hummus with pretzels for a snack last night. (Note: In my next batch, I think I might try adding just a little bit of water to the mix.)

Alphabet Soup

The new recipe I tried this week was the alphabet soup from Quick and Easy Vegan Comfort Food


It was super simple to prepare, and even though I was kind of confused about including agave nectar in a soup, I made sure to follow this recipe exactly. 



It turned out alright, could have been a bit saltier, I guess, but good for such a simple recipe. 



I had some of the leftovers today; this is another recipe that's good (and slightly better) as leftovers. 



(P.S. Next week I plan to try the hummus recipe!)

Banana Pancakes

For my new recipe this week, I tried the banana pancakes from Quick and Easy Vegan Comfort Food.


My changes were to halve the recipe and use all-purpose flour (instead of half all-purpose and half whole wheat). 



My pancakes always turn out weird shapes, but regardless, these ones were delicious, nice and soft. 



The recipe noted that they would be sweet, so I didn't even bother adding syrup on top & they were perfect plain. 



I had the leftovers with banana slices and some powdered sugar on top. Yum!

Veganized Orange Chik'n

My new recipe of the week was the veganized orange chik'n from Quick and Easy Vegan Comfort Food


My changes for the orange sauce were to leave out the mirin and only do ½ cup sugar.


The tofu (chik'n) was easy enough to prepare, just cut it into small pieces and bake it, though a few of the pieces ended up sticking to the foil, so I'll have to be sure to use a bit more canola oil spray next time.


The orange sauce was easy, too, until I got to adding the cornstarch and I was too focused on measuring out the right amount to whisk it into the rest of the sauce in time and I ended up with several clumps of cornstarch. So the sauce ended up being a bit thinner than it was supposed to be, but I actually liked it that way.


Overall, I really liked this recipe. The sauce was a bit spicy (I always think that, don't I?), but very delicious. I'll definitely make it again.

Served with brown rice and steamed broccoli.

I had some of the leftovers for lunch today; this time I added in some carrots as well, and thoroughly mixed everything together with some of the extra sauce.
