Post-MoFo Blogging

Well hello there on this rainy dreary first day of October! Vegan MoFo might be over, but I'm still in the blogging mindset, so here's a quick post for you today!

For lunch, I made Earth Balance's cheddar mac & cheese, topped with sliced carrots and a sprinkle of salt and pepper. 



For dinner, I decided to run with Tea and Sympatico's suggestion of using Old Bay Seasoning with baked tofu. It was good, but I should have used more of the spice mix; next time, hehe!


Served over peanut butter white rice and broccoli.

In other news, I've started decorating for Halloween...

  3. I've always thought about adding vegetables to my earth balance mac and cheese- there is all that extra sauce! But when I make it I always am craving a cheesy macaroni goodness and am afraid the vegetables will take away from that comfort food feeling! :) I bet it was good with carrots!

    1. Haha, yeah I know what you mean; I usually just have veggies on the side because I don't want to take away from the cheesiness of the mac, but the carrots paired nicely! :)

  7. Mmm, two nice bowls of food there. My friend bought me some Earth Balance mac n cheese back from a holiday in the States. Hope we can get it here soon. I'm really into baked tofu at the moment. We had a Mexican style one the other day from the Candle Cafe book that was marinated in orange juice and was so full of flavour

    The baked tofu looks super delicious!
    I LOVE halloween =D =D I am just waiting for Canadian Thanksgiving to be over so I can start decorating. Fun fun!
