Meals with Garden Veggies

Hello everyone! My garden's coming along pretty well so far -- I've already harvested some radishes, a cucumber, kale, and lots of snow peas!


On Monday, I had a harvest dinner which included some roasted snow peas and radishes (as well as leftover biscuits and Boca chik'n)...



...And tonight, I chopped up a bit of the cucumber and cooked the kale using the collard greens recipe from Quick and Easy Vegan Comfort Food. (As you can see, I wasted no time in making the cheddar cheesy garlic biscuits again hehe.)

  1. I have been planning a garden for the last... five years? There is a raised garden bed, but I need to weed it and refill it with decent soil and plant things. The problem is, while I love the idea of growing my own food, I had gardening. What I actually want is for someone to do all the set up and maintenance for me, and then I can just swan along and reap the rewards. ;)

    1. Yeah, I had help from Zach to get it started; he constructed the garden bed and took care of the soil! I enjoy doing the weeding now because I get this protective feeling for the vegetable plants I'm growing haha! But the harvesting is definitely the most fun part! :D

  2. I've been doing well with green leaves and have managed to harvest spinach, mix uns and rocket all summer. My pot of beetroot plants got over run with some weird fungi though and my 5 bean plants grew one between them! My next door neighbour has just given me a big tomato plant that looks like it will do ok though so looking forward to fresh tomatoes :) Your harvest looks fantastic.

    1. Yay, that's great to hear! That's a shame about the beetroot plants, though. Thanks; I'm looking forward to tomatoes as well -- just noticed tiny green cherry tomatoes on the plants a couple days ago! :)

  3. Ahhh lovely, you are doing so well! I am a Plant Killer. I have one basil plant in intensive care right now, and a chilli plant that seems to be in a stable condition :/

    1. Thanks so much, Jenny! I always thought I was a plant killer, too, but it seems like that only applies to indoor plants now haha. Cheering on your basil and chilli plants! :)

  4. I am always impressed when people grow their own produce! I've always been a flower gardener and now that I am on my own, I have been seeing my garden fail because it keeps getting nibbled on by rabbits, squirrels, and chipmunks! T_T

    1. Thanks, Jennifer! :) That's too bad about your garden getting nibbled on; hopefully they will start leaving it alone. A couple days ago, my chamomile seedling got gobbled down; I'm hoping it manages to grow back!
