May MiniMoFo: Favorite

Hi everyone! May's MiniMoFo theme is "favorite," so here are some of my favorites from this month. First up is a corn & mac bake, which I made for the potluck dinner celebrating the May 1 march & rally...


The blueberry maple syrup we got from our trip to Maine is also really good...





I ordered some nacho cheeses from Vegan Essentials; the Spicy Nacheez was amazing, and the Chipotle Nacho Nutcheese was a close second...




And finally, the new recipe I've enjoyed the most this month is the creamy mushroom pasta from My cat loves Daiya!, which I posted about here


My favorite kitty pictures are when they are hanging out together, like Cringer and Daisy here in the sunshine...

Cookies & Cream Mug Cake (House Vegan)

Hi everyone! The new recipe I tried this week was House Vegan’s 90 Second Vegan Cookies and Cream Mug Cake. Since I didn’t have 4 oz mugs or ramekins, I made it all in one regular mug and heated it for a bit longer in the microwave. It was fun & easy to make, and quite delicious! I kind of want to make a full-size version of this cake now, haha!

Creamy Mushroom Pasta (My cat loves Daiya!)

Hi everyone! When I saw the creamy mushroom pasta on My cat loves Daiya!, I knew I’d have to give it a try, and I’m so glad I did. This recipe is absolutely perfect – I finished up the last of the leftovers for my lunch today, and I already want to make it again! Just need to get more mushrooms first!

ANZAC Biscuit Smoothie (Kittens Gone Lentil)

Hi everyone! Sorry I missed posting last week; it was quite busy! The march and rally for Un Día Sin Inmigrantes on May 1 went really well; here’s a link to an article about it: Phoenixville community members hold immigration rally. The next day, Zach and I headed out on a road trip to Maine! There wasn’t anything too exciting food-wise; we kept it simple (oatmeal, peanut butter & jelly sandwiches, random snacks, and Subway sandwiches haha), so I didn’t bother to take pictures. (I did, however, take 450+ nature photos, which I still need to sort through.) To get back into the swing of weekly blogging with a simple recipe, I tried one that Susan (Kittens Gone Lentil) shared for an ANZAC biscuit smoothie. It was easy to make & so delicious! Definitely give it a try!
