Spicy Eggplant

Hi everyone! This week I made another attempt at the spicy eggplant recipe. It’s better, but still not quite there; I think now it needs a bit more spice. I might experiment more with this recipe in the future, but I’ll share the most recent recipe today because this version is still pretty good… 

Spicy Eggplant

Ingredients:
1 eggplant, sliced and cut into quarters
2 medium bell peppers, diced
1 small onion, diced
½ T canola oil
1 tsp minced garlic
½ tsp red pepper flakes
¼ tsp ginger
1 T soy sauce
2 T hoisin sauce
2 tsp sriracha

Directions:
Boil the eggplant pieces until softened, drain and set aside. Saute the peppers and onion with the canola oil, garlic, red pepper flakes, and ginger for five minutes. Add the eggplant. Cover and simmer for ten minutes, stirring every now and then. Add the soy sauce, hoisin sauce, and sriracha and simmer for five minutes. Serve with rice.

  1. I have a love-hate relationship with eggplant. When done well, it's heaven. When not, bleh. I'm afraid I've cooked a lot of bleh eggplant in my life, but I'm determined to crack the code. I'll be interested to see where your recipe lands.

    Your lettuce looks amazing, by the way.

    1. Thanks! And yeah, I had a major "recipe fail" years ago when I tried to make eggplant chips; this was a much better way for me to cook eggplant! :)

  3. Spicy Eggplant? I'm THERE! And that box looks like the ones we have at our local ALDI! Minus the awesome cat, of course! LOL :)

    1. Thanks, Susan; I'd actually gotten a bit frustrated with the kale sketch because I'd started down at the stalks and then ended up running out of room on the page to do the entire head of leaves, haha! :D

  5. I need to try this recipe. I used to get a spicy eggplant dish from my fave Chinese restaurant in Seattle and I've never been able to recreate it!
    I love the onion, the detail is amazing!!!
