Mexican Rice (Vegan Mexican Food)

Hi everyone! The new recipe I tried this week was the Mexican rice from Protest Kitchen, but as noted in the recipe intro, it’s originally from Vegan Mexican Food; you can find the recipe here. It turned out great, even though I was skeptical of the instructions not to stir, haha! (My only change was leave out the salt since the vegetable broth I used was already plenty salty.) Of course, I hadn’t planned anything else to have with it, so I just kept it simple and added a Boca chik’n patty and some mixed vegetables; whenever I make the rice again, I’ll have to try some more recipes from Vegan Mexican Food! 


Bonus food: I found an everything bagel seasoning mix and used it on avocado toast; thanks for the suggestion, Sarah

  2. Ahhh Cringer! How adorable!! The rice sounds awesome and I love having chick'n patties on hand for just that reason! That breakfast looks AMAZING!! So glad you liked the seasoning!

  3. Mmmm that sounds yummy to use some of the veggies in the liquid of the rice. I know why they say not to stir! Stiring the rice after a certain point releases starch and makes the rice gummy.

  5. Looks pretty good! Never cook rice while it's cooking unless it's risotto or something; it will not reward you. I see tater tots and ketchup and a tofu scramble with your avocado toast, so a perfect meal.

    1. Thanks! Yeah, I don't normally stir rice much (if at all) beyond when I first add water/broth, but when the recipe said not to do even that, as well as reminding a second time not to stir, I was thinking, "OK, this is serious business!" :D
