Hello everyone! Today's Vegan MoFo theme is: Treat yourself…to a break – What’s your “easy cook” meal? That you make when you can’t be bothered to cook much? My recent lunches have been quick meals like soup cups; the only "cooking" required is to boil some water (or you can add water and microwave; I prefer the boiled water method). Easy peasy. This week I tried two new varieties. The hot & spicy clear noodle soup was my definite favorite; the noodles were so good!
The cute kitty for today's post is Cringer; this is a picture from back in September when I cleared space on my desk so she could have a little cat bed there. She loved it the first night, but then lost interest pretty quickly.

Poppy's Corn & Mac Bake
Hello everyone! Today's prompt is: How to make friends – What’s your go-to “impress me” meal? My grandfather's corn & mac bake was an impressive & yummy holiday dish when I was younger, so for dinner tonight, I decided to make my veganized version, which Zach enjoys as well. Prior to tonight, the last time I made this was for a potluck with Zach's soccer friends, several of whom have children. It was a hit with everyone, but especially the little kids, who upon seeing all the food laid out, immediately zeroed in on my contribution, yelling "MAC AND CHEESE!"

Poppy's Corn & Mac Bake, veganized
Ingredients:
- 1 can corn kernels (don't drain)
- 1 can creamed corn
- 1 stick melted vegan butter/margarine (I use Earth Balance)
- 1 cup vegan cheddar, shredded (I use Daiya)
- 1 cup elbow macaroni (cooked)
So, to sum up, Poppy's corn & mac bake is an impressive meal because:
- it's a crowd-pleaser at holidays and potlucks, even with kids and nonvegans
- it's super simple to make
- it can stand alone or be part of a bigger meal
- the leftovers are delicious

Potato Bowl with Carrots and Broccoli
Hello everyone, and Happy Vegan Month of Food (Vegan MoFo)! This week's theme is Treat Yourself (and others), and today's prompt asks: "What is your favorite food? Make it and share!" I had difficulty deciding on a favorite food, so I referenced my blog label count for ideas. It turns out that potatoes, carrots, and broccoli are the individual foods I most commonly post about, and the three of them combined just so happen to make one of my favorite bowls. So for dinner tonight, I baked potato wedges with some canola oil and Old Bay seasoning, adding some carrots and broccoli near the end. A perfect way to celebrate World Vegan Day!
