Peanut Butter Hot Chocolate Mix

Hi everyone! The last day of Vegan MoFo is here; how did it go so fast? Today's prompt is: Food Gifts – Do you like to give food as a gift? Or receive? Show/tell us! I don't usually give food as a gift, but I decided to test out a recipe that sounded perfect for a holiday food gift: the peanut butter hot chocolate mix from House Vegan: Fall FoMo No More. It's super simple to make, and Zach and I gave it a try tonight. I used almond milk and Zach used coconut milk; we both thought it was delicious!

Kapusta i Lazanki

Hi everyone! Today's Vegan MoFo prompt is: Holiday Test Run – It’s always good to practice – show off your hits and misses. I've been thinking about making some dishes for a mini-Wigilia, so I decided to test a recipe -- kapusta i lazanki (cabbage and noodles) -- for my dinner tonight. I followed this recipe and halved it, using vegan substitutions (vegan butter & sour cream, fusilli instead of egg noodles). Since I used red cabbage, everything turned a purple-pink color, hehe! Taste-wise, it was good but not great. I kinda wish there had been more mushrooms; the mushrooms were really good in this! If I do make it again, I think I'll decrease the cabbage and increase the mushrooms so there's a better balance.

Holiday Sugar Cookies

Hi everyone! Today begins Vegan MoFo's Holidays theme with the prompt: Holiday Bake Day! – What are you planning on baking over the winter holidays? Do you make cake, or cookies? Or something savory? I decided to make holiday sugar cookies tonight and test out eight different shapes to see which ones work best.

My favorite shape is the Christmas tree, followed by the star and the gingerbread person, so if I do make cookies again, those will be the shapes I'll use.

(The snowflake shape looked like an asterisk to me, and the snow person was OK, but I feel like it's one that would need icing on it to emphasize what it's supposed to be? Same for the wreath shape; it doesn't really work since it's not hollowed out in the middle. The candy cane shape turned out a bit too thick, and the "biscuit" shape wasn't all too holiday-y.)

Hi everyone! Today's Vegan MoFo prompt is: Changed Opinion – Was there a food you used to hate, and now don’t? When I was little, I used to hate broccoli, and now, it's one of my favorite foods. My sister and I always used to split an order of chicken with broccoli when we went out to a Chinese restaurant as a family, but I really only enjoyed the chicken (the broccoli was tolerable with the sauce, but I still wasn't a fan). But then, years later when I went vegan, I began to love broccoli and appreciate it so much more! Today my family stopped by to visit and we all went out to Sutao Cafe. My first plate had lots of broccoli -- fried broccoli, as well as broccoli in the vegetable fried rice and in the mixed vegetables -- and it was amazing!

Things change!

Hi everyone! Today's Vegan MoFo prompt is: Cookbooks – Show us your favorite cookbooks! I don't have too many cookbooks, but the ones I have, I really like. My favorite is Quick and Easy Vegan Comfort Food by Alicia C. Simpson; I posted about it here during last year's Vegan MoFo. I've tried lots of yummy recipes from it, but my overall favorite is the veganized orange chik'n

I love my random cookbook; it's a re-purposed photo album (the sleeves hold recipes I've found online as well as ones my mom has cut out from magazines/newspapers and mailed to me).

I've been trying more recipes from Isa Does It by Isa Chandra Moskowitz, and they've turned out really well, like the Omaha Yakisoba from earlier this month and the marbled banana bread. I especially love this cookbook for how beautiful the photography is!

And today, my brother-in-law Ben gave me a new cookbook (Vegan: 60 Vegetable-Driven Recipes for Any Kitchen by Gena Hamshaw). I've already paged through it and found the recipes I want to try first: peach crumble coffee cake, butternut squash mac and cheese, lentil sloppy joes, and double-chocolate brownies!

Mac & Cheese

Hi everyone! Today's Vegan MoFo prompt is: Vegan Memories – What was your first vegan meal? Or the one you remember the most? I don't really remember what my first intentionally vegan meal was, but I do remember my first (failed) attempt at vegan mac & cheese. The recipe I'd found had called for way too much nutritional yeast; the final product was not appetizing to me as a new vegan. It was kinda discouraging, but thankfully by my first Vegan MoFo (November 2010), I'd discovered Daiya cheese; eventually, I learned to appreciate nutritional yeast again, and I've made some great mac & cheeses in the meantime. So tonight, in memory of my first vegan mac & cheese, I tried a new recipe from My cat loves Daiya!; I knew this one would be a success!

It turned out absolutely amazing; I seriously wish I'd had this recipe when I first went vegan!
If you've been looking for a new mac & cheese recipe, be sure to give it a try! My only modification was that I used Chao (creamy original) slices because I couldn't find FYH American slices.

Thanksgiving 2016

Hi everyone! Today's Vegan MoFo prompt is: Thanksgiving – Americans, what are you making for Thanksgiving? Non-Americans, have a go at making something thanksgiving inspired! For Thanksgiving dinner at my aunt's today, I made a Tofurky roast with butternut squash, as well as onion potatoes. (My sister made Poppy's corn & mac.)

Tea & Oatmeal

Hi everyone! Today's Vegan MoFo prompt is: Autumn/Fall Traditions – Are there any foods you traditionally make in this season? Back in October, I tried two new fall recipes: Chickpeas and Dumplings and Coconut Pumpkin Bread, but I guess my main tradition is that when fall begins, I start drinking tea in the morning and having oatmeal instead of cereal. I prefer Numi's rooibos chai this time of year, and I make my oatmeal with a bit of water, some soy milk, a spoonful each of chia seeds and coconut oil, a handful of raisins, several pinches of salt, and a few shakes of cinnamon. It's a nice, warm, fortifying breakfast.

Victory Smarties

Hi everyone! Today's Vegan MoFo prompt is: Silly food – What are some silly food traditions/memories you have? This is a timely prompt because I've been enjoying my "Victory Smarties" this month...

On Halloween night, I set aside some of the leftover candy (specifically, the Smarties). And then, each day in November when I complete my daily writing goal for National Novel Writing Month (NaNoWriMo), I have one of the rolls of Smarties as a reward. 

I've been writing at least 2,000 words a day (it's 1,667 words/day to stay on track), and
I'm at 44,654 words so far. I have a nice buffer built up, so I'll get to skip some days of writing for Thanksgiving and the weekend!

Bacon & Cheese Omelette

Hi everyone! Vegan MoFo's Memories & Traditions theme week has begun (here's the round-up for last week), and the prompt for today is: Favorite memory – What’s your favorite ever food memory? Recreate it. Growing up, my family often went to a diner in town for Sunday breakfast, and I always ordered the same thing: a bacon & cheese omelette. To recreate a vegan version of it, I used the VeganEgg, some Lightlife bacon, and a slice of Chao (creamy original). The omelette was pretty good; it tasted quite similar to how I remembered it, especially the Chao cheese!

Strawberry Pineapple Green Smoothie

Hi everyone! Today's Vegan MoFo prompt is: It’s Easy Being Green – Look after the environment, or just eat green veg – go green today! A few days ago, I made an attempt at a green smoothie, specifically the Strawberry Pineapple Green Smoothie from Quick and Easy Vegan Comfort Food. Everything looked great going into the blender: the kale, the frozen strawberries, the fresh pineapple, so pretty and colorful...

... but it turned out brown, even though the cookbook said it would be "a rich green color"...

If you look closely, there are little flecks of green!

I tried a few sips and wasn't too impressed with the taste, so I thought, might as well add the optional protein powder, but that didn't help any. Well, at least I tried; I just prefer to eat my greens than to drink them, that's all!

Forbidden Rice with Black Beans

Hi everyone! Today's Vegan MoFo prompt is: Goth Day – Blues, purples, blacks? Let your dark side shine, so I made forbidden rice with black beans. Zach said it looked like "dinner from the Black Lagoon," but it was really good! I cooked the rice in vegetable broth, and added salt & pepper to the black beans.

Aram's Rum Raisin Ice Cream

Hi everyone! Today's Vegan Mofo prompt is: Grayscale – Can you make your food look like a photo taken with a black and white camera? Or take a photo in black and white that looks great. This was perfect for another Veganlist post! 

We see Aram having some ice cream at the end of "The Artax Network (No. 41)" (Season 3, Episode 20), and in the following episode -- "Susan Hargrave (No. 18)" -- he mentions it when telling the task force about his surprise visitor that night...

Aram: Right. Okay, yeah. So... I'm sitting there eating a half gallon of ice cream -- rum raisin -- when he suddenly shows up. Mr. Reddington at my door in the middle of the night. I know. Kind of weird. Although, truth be told, we do sort of have a special relationship.

In order to make Aram's rum raisin ice cream, I followed this recipe, though I used apple cider as a substitute for the rum. It turned out really well, but unsurprisingly super coconutty!
