Hi everyone! I still have some frozen leftovers from Vegan Month of Food, so I’ve been trying to work through them. On Monday, I made some mac & cheese using the last of the nacho sauce from the loaded potatoes and adding some coconut bacon (leftover from the macaroni with butternut squash and avocado). It was really good!
Then on Wednesday, my sister and I went to Sutao Cafe! We got a lot of great food; here are our first plates and soups!

And on Thursday, I made a grilled cheese sandwich using Violife cheddar; it was so good, and it’s now my favorite vegan cheese for grilled cheese!
Here’s Rogue being a cutie in her tunnel; she loves running through it, especially when she’s hunting her pink flamingo toy.
She’s still playing a bit rough with Daisy (and Daisy won’t stand up to her like the others do), so we’re continuing to supervise their interactions and intervening when necessary (ex: Rogue has Daisy pinned and after a couple play bites, Daisy squeaks to be let go, but Rogue ignores her and keeps biting). Daisy seems to be genuinely interested in playing with her, so we’re hopeful that they will become friends once Rogue learns to respect when Daisy’s had enough. Rogue continues to test Cringer’s boundaries by chasing her but backs off when she hisses; the times she’s approached Cringer calmly, they’ve interacted smoothly. Leela grumbles when she sees Rogue, and Rogue seems to get the message (it probably helps that Leela is the biggest cat, haha).
Peace. :)
Hi everyone! Today's Vegan MoFo prompt is "Vegan cheese is real cheese!" I decided to try a recipe I'd bookmarked from AfroVeganChick for chipotle macaroni & cheese salad. Stirring the mac, watching as the Chao cheese melted perfectly, adding the spices... it smelled so good! I was tempted to dig in right away, but the mac had to go into the fridge to cool, so I just licked the spoon and had my ziti leftovers for lunch. It was definitely well-worth the wait, though...
I had the macaroni & cheese salad with a veggie burger and some pickles for my dinner tonight, and it was absolutely delicious!
Here's my Inktober sketch...
I caught this action shot of Daisy leaping up next to my dinner while I was still trying to take pictures of it...
And Buttons had a good day today; here she is in her box nest in the sunshine...
Peace. :)
Hello everyone! Figured I would do a random food post since I haven't in a while, so prepare for lots of food photos!
Classic Double Cream Chive – Another great cheese from Miyoko's Creamery, delicious on crackers & bagels!
Daiya Supreme Pizza – Good, but I still wish Daiya made a thicker crust, like the Tofutti pizzas.
Double Cream Sundried Tomato Garlic – Good with crackers and on bagels, but absolutely amazing in pasta!
Peanut Butter Cheesecake – An amazingly delicious dessert from Vegan Treats! So very good!
SuTao Cafe – Alena and I went to SuTao again! These are the pics she took; mine came out very blurry, haha!
Bagels – I made another attempt at bagels, but this time the fault wasn't all mine; the hook in the bread machine appeared to have gotten stuck during the dough cycle, so the dough was a bit of a fail. I tried to redeem it, and at least some bagels turned out vaguely bagel-like. They still tasted good, though, and that's all that matters!
Ben's Chili – Zach's brother Ben visited and made an awesome chili!
Aged English Smoked Farmhouse – Eh, this one wasn't that great. It was a harder cheese and a bit too smoky of a taste for me.
Country Style Herbes de Provence – The cheese itself is good, but the herb coating is a bit too much. I kinda feel like it might have been better with less of the herbs but then actually incorporating them into the cheese. Still good, though.
Gardein Crispy Chick'n Sliders – The first time we tried these was at a get-together hosted by Zach's parents. They were pretty good, so we tried them again, this time with tater tots!
Well, it looks like it's time to get started on the chamomile lavender cupcakes (using this recipe); Zach and I are hosting Easter dinner this year, so I'll have pics from that for my next post!
P.S. Flowery photo from the first day of spring...
Peace. :)
Hello everyone! I decided to try to make baked mozzarella sticks this week, but the real inspiration for doing this was I had a dream that I made BBQ mozzarella sticks – which was probably inspired by me having made the General Tso's tofu – and I really wanted to try it out.
I sliced up a Follow Your Heart vegan mozzarella block, dunked the pieces in a mix of water and whole wheat flour, then breadcrumbs, and baked them for 10 minutes. I then dunked some in BBQ sauce but left most of them plain – in case it turned out to be a bad idea – and then put them all back in for another five minutes. Zach thought the sauce was a gross idea, so he just had the regular ones, dipping them in pasta sauce. I tried both, but I absolutely loved the BBQ ones.

I made another batch of plain mozzarella sticks today, this time going with Zach's suggestion of brushing over a bit of melted Earth Balance before baking them another five minutes. They turned out well, but I used a thinner tray this time and several of the mozzarella sticks burst open with cheese. Whoops. All in all, Zach liked this version best.
Here's Daisy checking out the mozzarella sticks today...
In other news, for those of you who are interested, I made an author page for myself on Facebook this week.
Peace. :)
Hello everyone! January seemed to fly by pretty quickly, so I figured I would do a post with some of the fun new foods I've tried this month.
First up are two Amy's products... The Indian samosa wrap was good, but I much preferred the bean & rice burrito.
Next we have some fancy vegan cheeses. My brother-in-law Ben suggested we try a Miyoko's cheese when he visited me and Zach, so we stopped by the health food store and decided on the double cream garlic herb. We had it with crackers, and it was absolutely amazing! I also tried it as a spread on a toasted bagel, and I didn't even need to use that much of it. Yum all around.
So, needless to say, now Zach and I want to try all the fancy vegan cheeses haha! The next one was the Treeline herb-garlic flavor, for comparison purposes. Overall, we much preferred Miyoko's, but I did appreciate that this Treeline one came in a plastic container with a lid (less mess, more convenient) instead of a packet that had to be cut open.
And now, last but not least, two new Gardein items that I tried... I really liked the turk'y cutlets, especially since they came with gravy; they were perfect with mashed potatoes.
The pocket meal, on the other hand, wasn't that great (but it was buy one, get one free so I'm not complaining too much). I guess it just seemed odd that the outer layer was breaded chick'n, like that's not really how I would picture a “pocket meal” haha. The filling was good, though.
Peace. :)
