Vegan Treats, Sutao Cafe, Thanksgiving, and More!

Hi everyone! It’s been a busy week! On Saturday, Zach went to Vegan Treats and picked up some birthday goodies as a surprise for me: an apple pie cheesecake (so good!) and a pumpkin cake (so cute!)



On Sunday, we visited the Wolf Sanctuary of PA in Lititz. The wolves were happy because it had just snowed!

After the sanctuary tour, we went to the Tomato Pie Cafe for a late lunch; I got the vegan black bean burger and chips! 


On Monday, I made mac & cheese and Brussels sprouts and tempeh, so that made for some good lunches throughout the week… 


Also on Monday, I hit 50,000 words and finished NaNoWriMo early!


On Wednesday, Zach and I walked a section of the Perkiomen Trail…

And then we joined my family for dinner at Sutao Cafe to celebrate my birthday! I’m finally thirty, hooray!

On Thursday we had Thanksgiving with Zach’s family; dinner and dessert were both fully vegan, which was awesome, and everything was so good!

When we got home, I had some of the pumpkin spice almond milk from Trader Joe’s and it was really good… 


And for a quick dinner tonight, I had an Amy’s baked ziti bowl, which was good for an easy meal! 



Wednesday morning, Leela wasn’t eating or drinking, so we brought her to the vet; she was given fluids and medicine and as soon as we got home, she made a beeline for her food and started eating! She’s been doing better since then (the pain medicine the vet suggested we start giving her seems to be helping), and she’s been getting lots of cuddles and loves hanging out on this sleeping bag! Here’s Leela posing with the little friend my mom got for her…

Pumpkin Dandies Rice Crispy Treats

Hi everyone! Short post today – the exciting food from this week was from Blackbird Pizzeria on Sunday; of course I forgot to take pictures, but I got a slice of mushroom pizza (so good!) and a cheesesteak, which is always great!

On Wednesday, I made rice crispy treats using the pumpkin-flavored Dandies marshmallows I’d gotten from V Marks the Shop. I just followed the recipe on the back of the bag, which was nice and simple – I melted the marshmallows with some Earth Balance and maple syrup and then mixed in crisp rice cereal. I brought them to D&D for a snack, and the group enjoyed them. I still have some leftovers for myself, though!



I made another batch of the kale and pasta dish on Monday, so the leftovers (plus avocado) were perfect for easy lunches throughout the week… 



In other news, I’m almost done NaNoWriMo; I’m at 42,000 words! And I’m currently reading Beasts of Burden by Sunaura Taylor…


Daisy was super cute today squeezing through the banister in the hallway by the stairs. She posed for some pictures before backing her way out…

Some Yummy Goodies Plus Chickpea Pancakes

Hi everyone! I reached 28,000 words yesterday for NaNoWriMo, so I’m more than halfway there, woohoo! On Saturday I made the pumpkin rolls I’d gotten from Trader Joe’s and they were so good! 



On Sunday some friends and I went to V Marks the Shop; it was my first time there and it’s such a nice little store with so many amazing vegan products. When I saw the pierogies, I knew I needed to get a box (and another for my sister). I also grabbed some Thai peanut jerky and pumpkin Dandies for myself.






This week I made the savory chickpea pancakes from Amber Eats Veg Presents: This Vegan Lyfe. They were delicious – I had some with ketchup and the leftovers with smashed avocado, yum! 





And just for fun, I tried to make a gluten- and oil-free version of my mushroom gravy, and it turned out pretty good. I still need to make a few adjustments with the spices, but once I’ve perfected the recipe, I’ll be sure to share it!

Vegan Treats, Yummy Meals, and Kitties!

Hi everyone! NaNoWriMo is going well for me so far; I’ve managed to stick to my 2,000 words/day goal, even though some days the writing has been a bit slow-going. And I still need to get todays writing done, so lets get to the food, shall we? On Sunday we stopped at Vegan Treats; I got the nutella cheesecake, and it was really good! 



On Tuesday, I prepared a bag of the Light ’n Fluffy macaroni dumpling noodles and tossed in a bunch of kale near the end. After draining out the water from the pasta and kale, I added the dressing ingredients for the kale salad that I first tried during Vegan MoFo, and it made for a lovely dish with some great leftovers for the rest of the week. 


Last night for dinner I needed something simple, so I tried the ramen soup cup from Trader Joe’s; I added in some broccoli (and later, after the picture, some chopped-up Boca chikn as well), and it was nice! I also enjoyed the everything but the bagel seasoning on a toasted vegan-buttered bagel. 





Leela got nice and comfy to meditate with me this morning… 


And here’s Rogue being a snuggly little sweetheart…
