Good Food, More Nature Pics, and a Kitten!

Hi everyone! Let's get started with the food, shall we? One of my favorite easy lunches when I get home from my shifts at the pantry is a mac & Chao bowl with green beans and tater tots, plus a salad...


My fun dinners this week were burritos with rice, black beans, guac, and crushed Doritos (spicy sweet chili)...


I got this cream cheese for Zach, who ended up not being a fan of it, so I'm finishing it off. Even though I don't consider myself much of a cream cheese person, this is actually pretty good!


And this everything bagel seasoning hummus was a neat treat...



Leftover Gardein chicken fried rice with a Wegmans vegan eggroll...


And more chicken noodles, with soy curls!

And some nature pics from Norristown Farm Park; this walk was a nice way to catch up with a friend I hadn't seen since the beginning of the year......











And as promised, a kitten! Yesterday I got to meet Captain Fluffy Pants, who was rescued by a friend and is such an adorable little sweetheart, though still getting used to people. 



And to wrap up today's post, here are the two extremes of Rogue -- super-spinny ball of energy...

Fries, Risotto, and Gummies!

Hi everyone! On Sunday, I used the last of my potatoes to make a big batch of oven fries; I had some with green beans and an Asian veggie burger from Aldi…



Yesterday I made butternut squash risotto, which I enjoyed with some Aldi vegan meatballs… 



And I found these cute gummies today when I went out on a quick grocery run…


Here is a picture from a walk that Zach and I took yesterday. It was raining, so there weren’t many other people out, making social distancing easy!

Easter Food

Hi everyone! Zach and I hosted Easter dinner again this year; I think I’m getting better at perfecting the menu, haha! For a snack, we had Treeline cheese (we’d been planning on Miyoko’s but couldn’t find any nearby) with crackers, and I made a vegetable soup, but I forgot to take pictures of them, so moving on to the main event, heres my plate...

asparagus nut stir-fry, crescent roll with garlic powder and oregano, green beans (from my mom), corn and mac bake (from my sister), Tofurky vegan ham, and boiled potatoes with caramelized onions and dill

Dessert was a cake from my mom and a pie from Zach’s mom...



Bonus food: For dinner yesterday, I made yellow rice and asparagus, with some Gardein crabless cakes. The rice and asparagus were good, but the crabless cakes were just OK. I probably won’t get them again since there’s other Gardein foods that I enjoy more.

Potatoes, Garden Veggies, and Some Treats

Hi everyone! This week I had lots of potato meals and finished up my garden carrots… 


I also tried to embrace the cooler weather with some mashed potatoes and lightly-steamed green beans, which were a gift from another neighbor… 




Zach and I finally found some Miyoko’s VeganMozz, so last night, we gave it a try on pizza bagels! When I first pulled them out of the oven, it didn’t look like the cheese had melted at all, but pressing down lightly with a fork spread the cheese out nicely. And of course, it was delicious! 





Oh, and I can’t forget to share the goodies I got from Vegan Treats at Bethlehem VegFest last week! The lemon blueberry cheesecake was absolutely amazing, and I warmed up the sticky bun and had it for breakfast the next day; yum!

Vegan Easter 2017

Hi everyone! On Sunday, Zach & I hosted Easter. For a snack, we had Miyoko's chive & garlic herb cheeses with crackers... 


Next was an Easter vegetable soup (we also had rolls, made by Zach’s mom)…


And for dinner, we had: 

Tofurky ham!

Roasted red potatoes (made by my mom)

Boiled potatoes with caramelized onions & dill

Roasted asparagus (with canola oil, lemon juice, salt, and pepper)

And green beans (also by my mom)

Dessert was a messy but yummy chocolate mousse pie with So Delicious coco whip to top it off, but I forgot to take a picture!
