Lots of Pasta, and Other Good Food

Hi everyone! Last week I made a big batch of spaghetti with kale and Tofurky Italian sausage, with some salad as well...


A lazy meal of Upton's cheesy bacon mac with tater tots and pickles...


These granola bars, which were yummy...


And chicken noodle soup with Chao grilled cheese...



Last but not least, a delicious burrito, with these chips for some crunch...

Zucchini Cake, Packed Lunch, and SuTao!

Hi everyone! I made my first chocolate zucchini cake of the year, and I’ve already finished it off, so I’ll be making another later today! 


I packed lunch for working at the pantry on Thursday… 

Salad with cherry tomatoes, sunflower seeds, crispy onions, and Daiya ranch, plus a grilled cheese!

And more SuTao takeout!

Seed & Soil, Barrister’s Bagels, and More!

Hi everyone! On Sunday I went with my sister and her husband to brunch at Seed & Soil. I got the breakfast platter, which was great, especially the sausage!


We also grabbed a half dozen bagels from Barrister’s Bagels to split between the three of us. I had one of my salt bagels when I got home; it was so good, but I had to brush off a ton of salt, haha! 



I’d also ordered Seed & Soil’s mac & cheese to go, so that was my dinner…


For lunches this week, I’ve been having grilled cheese with tomato soup…


And yesterday I cut up the sandwich and tossed it into the soup!



I took this picture by the foundry this morning…

Spring is coming!

And here is a close-up of sweet Cringer; she was cuddling on me last night!

Some Delicious Meals This Week

Hi everyone! I still have some frozen leftovers from Vegan Month of Food, so I’ve been trying to work through them. On Monday, I made some mac & cheese using the last of the nacho sauce from the loaded potatoes and adding some coconut bacon (leftover from the macaroni with butternut squash and avocado). It was really good! 


Then on Wednesday, my sister and I went to Sutao Cafe! We got a lot of great food; here are our first plates and soups!

And on Thursday, I made a grilled cheese sandwich using Violife cheddar; it was so good, and it’s now my favorite vegan cheese for grilled cheese! 



Here’s Rogue being a cutie in her tunnel; she loves running through it, especially when she’s hunting her pink flamingo toy. 


She’s still playing a bit rough with Daisy (and Daisy won’t stand up to her like the others do), so we’re continuing to supervise their interactions and intervening when necessary (ex: Rogue has Daisy pinned and after a couple play bites, Daisy squeaks to be let go, but Rogue ignores her and keeps biting). Daisy seems to be genuinely interested in playing with her, so were hopeful that they will become friends once Rogue learns to respect when Daisys had enough. Rogue continues to test Cringer’s boundaries by chasing her but backs off when she hisses; the times she’s approached Cringer calmly, they’ve interacted smoothly. Leela grumbles when she sees Rogue, and Rogue seems to get the message (it probably helps that Leela is the biggest cat, haha).

Bookmarked Recipe: Caramelized Leek & Onion Miso Soup (Ichiban Vegan)

Hi everyone! Today I tried a delicious soup that I’d bookmarked back in Vegan MoFo 2015 – the caramelized leek & onion miso soup from Ichiban Vegan. It turned out really well, and was great with a grilled cheese sandwich!

Grilled Cheese with Sun-dried Tomatoes

Hi everyone! A fun lunch I tried this week was a grilled cheese sandwich with sun-dried tomatoes. I got the idea from Long Island Vegan. I didn’t have fresh basil so I just sprinkled some dried basil inside the sandwich. And I couldn’t find Follow Your Heart slices, so I used Chao instead. It was still delicious, though!

Random Food Since January

Hello everyone! Today's post features some of the stuff I've eaten and taken pictures of, but not blogged about, since the start of the year. But never fear, I still tried a new recipe this week, in fact, two new recipes. Together, my mom and I made the tempeh piccata, as well as the black-eyed peas and cauliflower from the cookbook Chloe's Kitchen. Good stuff! 



Now let's get started looking back on some of the new food I've tried since January. First up are the vegan cheddar flavor squares from Earth Balance. These were a pretty good snack; I enjoyed them.




Next we have some potatoes and carrots, baked with some onion soup mix.



I tried the Dr. McDougall tortilla soup; it was alright, but probably not something I'll get again. 




These were a special surprise from England; super delicious and I still have two left! Sure, a brown pudding isn't very photogenic, but it tastes amazing! 




Next up is an Amy's soup (Golden Lentil) I decided to try from the health food store. I love lentils, so I had high hopes for it, but upon trying it and finding out that everything, except apparently for a bunch of fennel seeds (?), was blended together, it was a bit too weird, texture-wise. The smooth, blended lentils would have been fine; taste-wise, it was absolutely delicious... but the whole fennel seeds really messed up the otherwise smooth texture and made it tough to enjoy. 




I tried two more of the Dr. McDougall soups: Thai Peanut and Garlic Vegetable. The Thai Peanut was alright; I preferred the Garlic Vegetable soup.






Next up is a let's-use-up-some-leftovers lunch: Tortilla chips, leftover black beans, and melted Daiya cheddar. 



Valentine's Day dinner with Zach: Spaghetti, Boca chik'n patty with some Daiya mozzarella, and garlic “bread” (bagel), with sparkling cider. 



I tried two new ramen that were on sale at the health food store. The lemongrass ginger one would be perfect for when you have a cold, and the Asian vegetable one was good as well. 






The new hummus I've been having with pretzels for a snack (it's good except for the pine nuts).


And finally, grilled cheese sandwiches featuring Field Roast's Chao cheese slices (creamy original), served alongside some Amy's vegan chicken noodle soup. 



And that about wraps it up! I'll probably do another one of these posts in a few months. For now, here's Buttons & Leela hanging out. Leela got to the sunshine first, but Buttons loves her little perch, so she didn't mind.
