Bookmarked Recipe: Loaded Potatoes (Hasta La Vegan)

Hi everyone! Today I made the loaded potatoes from Hasta La Vegan (Vegan MoFo 2017); it took me a while to get everything together, but it was so, so worth it!

Deliciousness upon deliciousness upon deliciousness…

    Yes, potatoes! I love that potato recipes can be quick and easy, or a bit more complex, but always delicious.

    This looks amazing! Kind of like nachos with roast potatoes instead of tortilla chips? :) I have a feeling this would be a big hit in our house, too.
