Hi everyone! This week I tried my first recipe from a new book/cookbook that my sister got for me: Protest Kitchen by Carol J. Adams and Virginia Messina.
I made the creamed spinach, which was super simple and super delicious (I had it as a dip with bagel chips). I made notes of all the other recipes I want to try, so you can look forward to seeing more Protest Kitchen food here in the future.
Cringer takes her turn at the top of the cat tower; she was a little annoyed that I interrupted her bird-watching to get a pic, haha!

Spinach and Feta Pinwheels (Long Island Vegan)
Hi everyone! This week I tried the spinach feta pinwheels, veganized by Long Island Vegan. They were fun to make, though a little melty/messy after baking, but still delicious! I’ll definitely make these again; they were a really fun treat, and the leftovers were great, too!
Here’s Rogue being a cutie, hanging out at the top of the tall cat tower. She often will skip the lower levels and just climb straight up the “trunk” of the tower like a baby bear would climb a tree, haha!
Peace. :)

Baked Pumpkin Walnut Rotini (AfroVeganChick)
Hi everyone! This week I tried the baked pumpkin walnut rotini from AfroVeganChick; it turned out great, and the leftovers were wonderful, too! I used spinach instead of broccoli and added an extra ¼ cup each of pumpkin puree and soy milk (which I used instead of almond milk) in order to get the sauce ingredients to blend together in my stubborn blender, haha!

March MiniMoFo
Hi everyone! “Go green!” is the theme for the March MiniMoFo, and all the new recipes I’ve tried so far this month have included spinach – Brown Rice With Lentils, Mushrooms, and Spinach Stir Fry (AfroVeganChick); Marinated Tofu with White Rice and Spinach; and Creamy Raw Spinach Sauce (Vegan Vittles). This week I tried making the creamy spinach dip from Vegan Vittles, but it didn’t quite work out (*shakes fist at my food processor*), so I gave up and just threw all the ingredients into a saucepan with a bit of water, heating it up and mashing the beans as I stirred, ultimately mixing it in with some fettuccine. So, both a recipe fail (didn’t work as the dip it was supposed to be) and a recipe redemption (was very tasty mixed with pasta).

Creamy Raw Spinach Sauce (Vegan Vittles)
Hi everyone! The creamy raw spinach sauce from Vegan Vittles was a very simple recipe to prepare, especially since I soaked the cashews overnight, which made blending a lot quicker. (After blending, I warmed the sauce for a bit on the stovetop since I’m not the biggest fan of raw foods, haha!) I poured ½ cup of the sauce over a serving of fettuccine and stirred them together. It was very tasty, and the leftovers have been great, too!
Bonus food: My sister Alena visited earlier this week and we made two different pasta dishes; both were delicious!

Marinated Tofu with White Rice and Spinach
Hi everyone! After seeing lots of success with marinated tofu over at My cat loves Daiya!, I decided to give it a try. I used a modified version of the orange sauce from the veganized orange chik’n in Quick and Easy Vegan Comfort Food – I left out the canola oil and cornstarch (and the mirin, but I always leave that out) – as a marinade for a block of tofu that I’d cut into smaller pieces. Later, I cooked the tofu, still in the marinade, and used some of the leftover marinade as a sauce when I added the tofu to the rice & spinach. It turned out pretty good, and it was definitely an easier way to prepare the tofu, so I’m sure I’ll be making more marinated tofu in the future! Do you have any favorite marinade recipes/ingredients you’d recommend?

Brown Rice With Lentils, Mushrooms, and Spinach Stir Fry (AfroVeganChick)
Hi everyone! The new recipe I tried this week comes from AfroVeganChick – Brown Rice With Lentils, Mushrooms, and Spinach Stir Fry – and it was amazing! (I used frozen chopped spinach instead of fresh, and left out the coriander.) I know I will make this again sometime soon; the leftovers were perfect, so much so that I was disappointed when I’d finally finished them off! Definitely give this recipe a try!

Spinach Tomato Linguine & Garden Veggies
Hi everyone! One of our neighbors gave us some veggies he grew, so this week I’ve been enjoying them.
I made a chocolate zucchini cake, added cucumber slices to a salad, and made one of my favorite pasta dishes (spinach tomato linguine) using the tomatoes. I have the recipe written down on an index card, but it looks like it originated from here, and I continue to modify it. This time, I left out the green onions (and obviously the feta cheese, which isn’t even on my written-down version, haha). I sautéed the frozen spinach first, in canola oil, then added the tomatoes. And finally I used garlic salt instead of both salt and garlic salt. It’s so simple, but so, so good! And the leftovers are great as well.
I’ll definitely make this again soon because my cherry tomatoes have started to come in, and if this harvest is anything like last year’s, I’m going to have a lot of cherry tomatoes on hand soon!
And yesterday Zach pulled up one of the carrots!
As much as I’ve been enjoying my cucumbers, I’m glad that the cucumber harvest has started to slow down a bit. In addition to the ones pictured with the other veggies above, there were only five others I picked since my last post.
The seeds I planted for the broccoli, cauliflower, and snow peas have sprouted, but there’s no sign of the kale, yet.
Here’s another of my wolf sketches…
Sometimes when Leela naps, she’ll hold up a curled front paw as if she’s saying “YES!” I often imagine her dramatically thinking, “Victory!” (which always makes me laugh).
Peace. :)

Some Food Since Vegan MoFo, Book Recommendation
Hello everyone! For my third post this
week, I thought I'd share photos of some of the food I've had since
the end of Vegan MoFo, as well as give a book recommendation.
Spinach, Daiya cheese, and Lightlife
pepperoni pizza
Peanut butter brown rice with peppers
Daiya frozen cheese pizza that I split
with Zach (the instructions on the box called for it to be baked a)
at way too high a temperature and b) for way too long a time; we took
it out early). It was good, though the crust was really thin.
Brown rice with squash (yellow &
green) and onions, also turmeric, cumin, salt, and I forget what
else; I had this with shiitake bacon, but took the picture before it
was done baking.
Plain "chicken" broth with rotini
noodles and crackers (to help me get over a cold)
Baked beans with wild rice and broccoli
Ingredients:
2 cans beans (I used 1 can dark and 1 can light
kidney beans)
3/4 cup brown sugar
1 tsp mustard
1/2 cup ketchup
Directions:
Mix brown sugar and mustard. Add half
of mix on one can of beans in a baking dish. Add second can of beans
and remaining mixture. Pour ketchup over and bake at 325°F
for two hours (I usually stir it every half-hour). I think I'm going
to start making these with less brown sugar because they seemed a bit
too sweet to me.
To utilize some of the leftover baked
beans, I made a quick burrito (baked beans, Daiya cheddar, sautéed
onions, salsa).
In other news, if you are looking for a
sweet story about an adorable cat, I'd recommend reading Homer's
Odyssey by Gwen Cooper, a book about a blind kitten she adopts.
It's a quick
read with lots of short chapters and several photos; kinda wish it had been longer! I
really enjoyed the funny and cute stories about Homer's various
adventures, quirks, and interactions with others. (Note: I personally
could have done without the "None So Blind" chapter where the
author discussed meeting her future husband. To me, it just seemed to
drag on; the only way it related to Homer was that he inspired her to "take the leap" and start dating this individual.) Now for the
sad part, the only reason I heard of this book in the first place was
that I saw an article about Homer having died at the age of 16 years old.
In the book, however, he is very much alive and his story is one that
I'll definitely remember. You can find the book here on Amazon.
Mystery, resting on the floor (she doesn't do this much, usually prefers to rest on the couch or bed)
Yesterday, I noticed Mystery just standing on the floor, in the sunlight coming through the window. She seemed hesitant to lie down but was enjoying the warmth of the sun, so I set a folded-up blanket on the floor beside her in case
she wanted a little "bed." She climbed on top of it, climbed off, and then laid down next to it!
I didn't get any pictures, unfortunately, but I'll definitely try to if she does it again.
Peace. :)

Random Vegan Noms
Hello on the 29th day of the Vegan
Month of Food! I can't believe there's only one more day left! I've had so much good food this month, but I didn't get the chance to
post everything, so here's a photo & commentary post of some additional vegan noms I've enjoyed in the past several weeks.
Random Vegan Noms
Hummus and Pretzels
My new favorite snack to have with tea time!
Sprouted Quinoa with Gardein Chick'n
and Spinach
Still getting used to quinoa...
Chick'n Soup with Wild Rice and Spinach
Served with crackers.
Spaghetti with Smart Dogs
I did this one as a tribute to The Big Bang Theory, when Penny offers to make spaghetti for Sheldon, and he requests that she mix in chopped-up hot dogs.
Mac & Cheese with Smart Dogs
Pretty good, just using up those Smart Dogs!
"Beef"-a-Roni
Made utilizing the leftovers from April and Andy's Frisbee Chili.
Peanut Butter Brown Rice (with Broccoli
and Peppers)
And baked potato "fries."
Be sure to check in tomorrow for my
Vegan MoFo round-up! I plan to include links to all the amazing
recipes that I hope to try soon, as well as to give shout-outs to my
favorite blogs this Vegan MoFo!
Mystery spent a good portion of the day
snuggling with Zach on the couch.
Oh, and be sure to hop over to Lymie Eating Coconut to see the awesome sketch she did of Mystery in
Caturday and Kit Kats!
Peace. :)
