Fancy Desserts and a Simple Meal

Hi everyone! Just a short post today of the delicious box of goodies Zach and I got from Vegan Treats last Saturday... 

cookies & cream cake, lemon meringue cheesecake, and brownie cheesecake

...And something super simple I made this week: pasta with tomato sauce and lentils. 

Boil 1 ½ cups elbow macaroni; when ready, strain and set aside. Combine 1 ½ cup tomato sauce and 1 can lentils (drained and rinsed) in the pot to warm up, then stir in the pasta. Makes three servings.

Here’s Leela, hanging out by the cat tower. She’s been loving the warm weather!

Brown Rice With Lentils, Mushrooms, and Spinach Stir Fry (AfroVeganChick)

Hi everyone! The new recipe I tried this week comes from AfroVeganChick – Brown Rice With Lentils, Mushrooms, and Spinach Stir Fry – and it was amazing! (I used frozen chopped spinach instead of fresh, and left out the coriander.) I know I will make this again sometime soon; the leftovers were perfect, so much so that I was disappointed when I’d finally finished them off! Definitely give this recipe a try!

Lentil Sloppy Joes (Food52 Vegan)

Hi everyone! Continuing with MiniMoFo's January theme of “new,” I tried another new recipe from another new cookbook. On Wednesday, I made the Lentil Sloppy Joes from Food52 Vegan by Gena Hamshaw; Zach & I enjoyed them on hamburger buns, with waffle fries on the side.

The leftovers came in handy for a quick late dinner on Thursday; my mom and I spent the day in Philadelphia at the Resistance in Philly: Fighting for Our Lives rally & march protesting Trump & the GOP who were staying at the Loews Hotel. The rally had a lot of great speakers, and then we marched, and wow, was it a crowd; the energy was absolutely amazing! I could go on and on, but suffice it to say, it was amazing and I am so glad that I went!
