Green Chili Mac & Cheese (My cat loves Daiya!)

Hi everyone! The new recipe I tried this week was the delicious green chili macaroni and cheese from My cat loves Daiya! I’d never cooked with green chiles before, but I’m glad I tried them because they were really good in this, and the almond cheese sauce was tasty enough on its own that I didn’t bother adding in the optional vegan cheese shreds at the end. Definitely a recipe to make again! 


Leela likes to jump into the bottom drawer of my dresser when I’m putting away laundry...

Parsnip Bacon

Hi everyone! This week I tried a new vegan bacon recipe, inspired by the parsnip bacon post on Lisa’s Project: Vegan. I used canola oil instead of sunflower oil, and liquid smoke and a sprinkling of salt instead of smoked salt. 


The parsnip bacon had a very nice crunch to it, and even though it mostly tasted like a parsnip chip to me, I still really enjoyed it in a bagel BLT (I also crumbled up some of the leftovers and added them like bacon bits to a salad, which was pretty good, too).

Grilled Cheese with Sun-dried Tomatoes

Hi everyone! A fun lunch I tried this week was a grilled cheese sandwich with sun-dried tomatoes. I got the idea from Long Island Vegan. I didn’t have fresh basil so I just sprinkled some dried basil inside the sandwich. And I couldn’t find Follow Your Heart slices, so I used Chao instead. It was still delicious, though!

Fancy Desserts and a Simple Meal

Hi everyone! Just a short post today of the delicious box of goodies Zach and I got from Vegan Treats last Saturday... 

cookies & cream cake, lemon meringue cheesecake, and brownie cheesecake

...And something super simple I made this week: pasta with tomato sauce and lentils. 

Boil 1 ½ cups elbow macaroni; when ready, strain and set aside. Combine 1 ½ cup tomato sauce and 1 can lentils (drained and rinsed) in the pot to warm up, then stir in the pasta. Makes three servings.

Here’s Leela, hanging out by the cat tower. She’s been loving the warm weather!
