Quick Post Today!

Hi everyone! A couple simple but delicious meals I’ve had the rest of this week include this vegetable quinoa soup (with crackers)… 



And more spicy peanut sauce with rice, baked tofu, and broccoli!

Sutao Cafe Plus Some Chicken Noodle Soup

Hi everyone! On Monday I hung out with my sister and we went to Sutao Cafe for lunch. Everything was amazing as always, but my favorite new thing was the roasted yams, which were super simple but so delicious that I got them with every plate! 





And last night I made myself some chicken noodle soup (macaroni dumpling noodles, carrots, soy curls, vegan chicken broth, and some dried chives). It was really good, and I know I’ll be making more soon!

Food with Family, Easy Weekday Meals

Hi everyone! We spent the weekend visiting with family; on Saturday, we met my family at Franconia Heritage Restaurant for lunch. I got the creamy broccoli and carrot soup, as well as the vegan tortellini since I’d enjoyed both last time, and they were great this time too! 



And then on Sunday, we went to Uno Pizzeria for lunch with Zach’s family, and I got the vegan cheese pizza again; yum! 


For dinner last night, I cooked up a big batch of onion potatoes to have with some Gardein fishless filets and baby carrots… 


And lunch today was peanut butter rice noodles with broccoli, cauliflower, and carrots…

Some Random Goodies + Christmas 2019

Hi everyone, I’ve finally tried the vanilla bean dessert hummus with some pretzels, and it is so good! 


I’ve also been enjoying this chocolate that Zach got for me… 


And I tried this new-to-me vegan mac; I didn’t care for the pasta on its own, but once combined with the sauce, it was delicious!

Lunch at Franconia Heritage Restaurant

Hi everyone, no new recipe again, but I do have an awesome lunch to share! My mom, aunt, and I took my sister to Franconia Heritage Restaurant for her birthday this week. They have a separate vegan menu, so we ordered lots of good food and were pleasantly surprised to find that the portions have increased since a previous visit in 2018. They had two vegan soups, so I ordered the creamy broccoli and carrot soup while my sister ordered the vegetable chowder. The soup arrived in an overflowing bowl, and it was incredibly delicious! 


My sister got the vegan chicken Parmesan (a breaded cutlet this time instead of Beyond Chicken strips) with fries, and I got the vegan tortellini, which was another gigantic serving, and a much better pasta-to-sauce ratio than it had been before… 


I was only able to put a small dent into that after finishing the soup (and the fries, which were an unexpected side), so I had some really nice leftovers for lunch this week!

Elementary, My Dear Vegan: Split Pea Soup

Hi everyone! Today’s “Elementary, My Dear Vegan” is from S1E13 (“The Red Team”). Before leaving a crime scene, Holmes scoops up Clyde (the pet tortoise of the murder victim) to take him home, commenting that tortoises “make an absolutely delicious soup stock” (Watson groans and walks away). Throughout the episode, Holmes interacts minimally with Clyde – feeding him lettuce (“can’t make soup out of Clyde until I’ve fattened him up”) and using him as a paperweight (“I hardly think he minds”) – and even requests that Watson not call Clyde by his name, as that will “make it harder to enjoy the soup.” At the end of the episode, Watson enters the kitchen and sees Holmes eating at the table.

Watson: You eating soup?
Holmes: I was hungry.
Watson: Please tell me you didn’t cook Clyde.
Holmes: (lifts Clyde up and set him on the table) The soup is split pea. These are magnificent creatures. Clyde will likely outlive both of us. You didn’t really think I would eat him, did you?
Watson: (sighs) I don’t know. I guess it’s hard to know what you’re gonna do.

For my split pea soup, I used this recipe from My cat loves Daiya!, and it turned out great! As convenient as Amy’s canned split pea soup may be, this recipe is so much better! (The leftovers are great, too!)

Three Sisters Soup (Protest Kitchen)

Hi everyone! Last night I tried another recipe from Protest Kitchen – the three sisters soup; it was simple and certainly tasted good, but it was not very filling. Today I added a cup of orzo to the leftovers, which helped improve things!

New Food, Leftovers, and the Firebird Festival!

Hi everyone! This was my easy lunch on Sunday…

The spring rolls were something new I’d found to try; they started falling apart when I was cooking them, so I just microwaved them instead, but they were really good! 


For several dinners this week, I made a slightly-modified version of the no chicken noodle soup from Long Island Vegan to use up some stuff; delicious! 


And to finish off the last of the golden gravy from Vegan MoFo, I baked some tater tots and cubed tempeh and poured the gravy over top; this might be one of my most beige meals ever, but it was great! 


And here are some photos from the Firebird Festival; it was an amazing time, as always! 









Cringer’s been cuddling up a storm with Daisy…
