Food with Family, Easy Weekday Meals

Hi everyone! We spent the weekend visiting with family; on Saturday, we met my family at Franconia Heritage Restaurant for lunch. I got the creamy broccoli and carrot soup, as well as the vegan tortellini since I’d enjoyed both last time, and they were great this time too! 



And then on Sunday, we went to Uno Pizzeria for lunch with Zach’s family, and I got the vegan cheese pizza again; yum! 


For dinner last night, I cooked up a big batch of onion potatoes to have with some Gardein fishless filets and baby carrots… 


And lunch today was peanut butter rice noodles with broccoli, cauliflower, and carrots…

Lunch at Franconia Heritage Restaurant

Hi everyone, no new recipe again, but I do have an awesome lunch to share! My mom, aunt, and I took my sister to Franconia Heritage Restaurant for her birthday this week. They have a separate vegan menu, so we ordered lots of good food and were pleasantly surprised to find that the portions have increased since a previous visit in 2018. They had two vegan soups, so I ordered the creamy broccoli and carrot soup while my sister ordered the vegetable chowder. The soup arrived in an overflowing bowl, and it was incredibly delicious! 


My sister got the vegan chicken Parmesan (a breaded cutlet this time instead of Beyond Chicken strips) with fries, and I got the vegan tortellini, which was another gigantic serving, and a much better pasta-to-sauce ratio than it had been before… 


I was only able to put a small dent into that after finishing the soup (and the fries, which were an unexpected side), so I had some really nice leftovers for lunch this week!

May & June MiniMoFo

Hi everyone! The theme for the May & June MiniMoFo was “food with friends,” which I expanded to “food with friends and family” because the biggest event in June was that my sister got married! There was some really good vegan pasta at the reception, and I brought home lots of leftovers, which made for easy lunches!

And I got to spend some quality cuddle time with Blu while Alena was away on her honeymoon...



For my dad’s birthday, my family met up for lunch at Franconia Heritage Restaurant; they have a separate vegan menu, and four of us ordered from it. Zach got the black bean & corn quesadilla (as did my mom), Alena got the vegan tortellini, and I got the chicken parmesan (Beyond Meat chicken strips with pasta sauce and Daiya mozzarella; it came with a salad but I gave that to my dad haha).

In garden news, I’ve continued to harvest snow peas, but now I have a bunch of golden wax beans coming in, too!
