Thanksgiving 2015

My aunt hosted Thanksgiving this year, so Alena and I planned lots of delicious vegan food to bring along! I made onion potatoes, a Tofurky roast with butternut squash, and French onion dip with Tofutti sour cream. 

I didn't get a photo of it, but my dad made a batch of vegan cream of broccoli soup, and we also had crescent rolls.

For dessert, I had a slice of apple pie (there was also pumpkin bread), made by my mom and Alena. 

Oh, and this year I sponsored two turkeys, Mordecai & Hershel, at Tamerlaine Farm Animal Sanctuary...

BBQ Jackfruit

Hello everyone! This week I tried out the Upton's Naturals Bar-B-Que Jackfruit that I'd ordered from Vegan Essentials. 

It was good, though not as great as I was expecting, haha. Here's how I had it...

over rice with broccoli and carrots (OK)

mixed in with rice, broccoli, and carrots in a burrito (better)

over mashed potatoes (best)

In other news, I am on a roll with NaNoWriMo, having written 2,000+ words each day, so I am currently at a word count of 42,011!

Pumpkin Spice Oatmeal Cookies

Hi everyone! Super quick post tonight since today was a fun but busy day (Zach, Alena, and I visited Skylands Animal Sanctuary & Rescue)! Here are the yummy cookies I made on Thursday. I used this recipe from House Vegan but left them as cookies instead of making them into cookie sandwiches. Delicious, and I think I might try adding cranberries the next time I make them. I always think of raisins in oatmeal cookies, but cranberries seem like they would be more fun with the pumpkin. 

P.S. Here is something I did to motivate myself for my NaNoWriMo writing, using some leftover Halloween candy – I have one after I've finished my writing for the day... hehehe!

Vegan Salami & Cheese Bagel Sandwich

Hello everyone! Recently I had a random dream where I was making myself a vegan salami & cheese sandwich on a bagel. I didn't think there were any vegan versions of salami, but sure enough, when I went to Wegmans that night, what did I find...

To recreate this simple sandwich, I melted two Daiya cheddar cheese slices in the microwave on half of the bagel and then added four slices of salami (it was a bit thinner than I would have preferred) and the top of the bagel. It worked for a quick lunch, but it certainly wasn't as exciting as the dream made it out to be, haha! 

Hope everyone had a good Halloween; here were our treats for trick-or-treaters...
