More Pizza and Trail Pics!

Hi everyone! I really enjoyed the pizza I’d made on Friday, so I made another for lunch yesterday, this time with green peppers and Italian seasoning; it was really good! 



For dinner I made peanut butter rice and broccoli for a burrito!

Elementary, My Dear Vegan: PB&J Sandwich

Hi everyone! Today’s “Elementary, My Dear Vegan” is from S1E22 (“Risk Management”) – Watson brings two plates to the kitchen table and makes peanut butter & jelly sandwiches while she and Holmes discuss the case they are working. So for my lunch today, I made a sandwich with creamy peanut butter and strawberry jelly (I toasted the bread a bit first to give it more of a crunch). It was simple but tasty, and it reminded me how I always packed myself PB&J sandwiches for lunch in college when I had just gone vegan, haha! I’m glad to have enjoyed some more exciting vegan sandwiches since then, but it’s good to go back to the classics every once in a while!


Leela likes to sleep (and stretch out) in the open closet next to my desk…

NaNoWriMo Food

Hi everyone! Yesterday I completed my ninth National Novel Writing Month (NaNoWriMo), writing 50,000 words in November!


I didn’t try any new recipes this week, so I figured I would (re)share what’s been my most dependable easy meal this month. I’ve posted before about my peanut butter brown rice burrito, but I modified it to be even simpler so I could have quick dinners when I finally finished writing for the day. I combine ½ cup of instant white rice and ½ cup of water, bring the two to a boil, stir, cover, and remove from heat. I let that sit while I heat up a cup of frozen vegetables (broccoli, carrots, and cauliflower) in the microwave, get out the rest of the ingredients (a tortilla, soy sauce, peanut butter, ginger, and garlic powder), and snack on some candy (leftover from Halloween lol; it’s usually victory Smarties, but I switched it up with Sour Patch Kids this year).
Then I stir the rice, stir in the veggies, add some soy sauce, a big spoonful of peanut butter, and some shakes of ginger and garlic powder, and stir it all together and then onto the tortilla for the burrito! 



In other news, I visited the firebird this week to take some pictures. The Firebird Festival is taking place on Saturday, December 8; it’s going to be our fifth time attending, and I’m so excited!

Bookmarked Recipe: Spicy Peanut Butter Ramen (Adventures in Veganism)

Hi everyone! Today I made the spicy peanut butter ramen from Adventures in Veganism (Vegan MoFo 2017); I always love recipes that include peanut butter, and this one was really fun and delicious! I’ll definitely make it again soon!


(I decreased the sriracha and red pepper flakes to 2 tsp each, which still kept it nice and spicy, and next time I’ll use less soy sauce; it was a bit too salty for me.)

Bookmarked Recipe: PB&J Overnight Oats (Go Vegga)

Hi everyone! Last night I prepared the PB&J overnight oats from Go Vegga (Vegan MoFo 2015), so I got to enjoy a fun new breakfast this morning! I still prefer warm oatmeal, but I certainly see the appeal of overnight oats, especially when you include peanut butter!

Tofu in Spicy Peanut Sauce (Modern Martha)

Hi everyone! This week I visited my sister and we tried a new recipe – the tofu in spicy peanut sauce from Modern Martha. It turned out really well; the only change we made was to decrease the amount of sriracha to 1 teaspoon. We had it with white rice and mixed veggies, and it was delicious! So delicious, in fact, that I’ve already made it again!


I’ve also tried some new popsicles recently; they were both really good, but between the two, I preferred the salted caramel one…

Peanut Butter Apple Crisp (The Cooking Club)

Hi everyone! Today's Vegan MoFo prompt is "History," so I made another apple crisp, this time with two of my favorite foods -- peanut butter and Granny Smith apples -- that I wanted to learn about more. (The original recipe is from The Cooking Club; use vegan butter.)

Peanut Butter Hot Chocolate Mix

Hi everyone! The last day of Vegan MoFo is here; how did it go so fast? Today's prompt is: Food Gifts – Do you like to give food as a gift? Or receive? Show/tell us! I don't usually give food as a gift, but I decided to test out a recipe that sounded perfect for a holiday food gift: the peanut butter hot chocolate mix from House Vegan: Fall FoMo No More. It's super simple to make, and Zach and I gave it a try tonight. I used almond milk and Zach used coconut milk; we both thought it was delicious!

Peanut Butter, Brown Rice, and Carrots

Hello everyone! Today's prompt is "What three endless food supplies would you take if you were going to be stranded on an island? (Imagine your nutritional needs have been met, these are a bonus!)." I knew peanut butter had to be one of them, so from there, I decided the other two would be brown rice and carrots (I would have said broccoli, but I'm all out, lol).




It's not too exciting, but my peanut butter brown rice is one meal I never seem to get tired of eating. If I'm going to be stuck on an island, I'll need something like this to see me through!
