Hi everyone, and happy solstice! This was my dinner on Sunday: Boca chik’n burger with Violife cheese on a pretzel roll, with Alexia waffle fries and pickles and salad with a tahini dressing…
I perfected the salad the next day by adding crispy onions!
Zach and I went kayaking on Thursday; here are the pics from before we took off down the Schuylkill River…
Once we were done, we ordered takeout from Moe’s for a late lunch/early dinner; I got a burrito with rice, beans, guacamole, grilled peppers, lettuce, and cucumbers, and it came with a huge side of chips!
And here’s a messy picture of a delicious part of my lunch yesterday – a Tofurky beer brat on a pretzel sausage bun with mustard and smashed avocado!

Hi everyone! I really enjoyed the pizza I’d made on Friday, so I made another for lunch yesterday, this time with green peppers and Italian seasoning; it was really good!
For dinner I made peanut butter rice and broccoli for a burrito!

Hi everyone! My good food the second half of this week has included peanut butter brown rice burritos…
As well as Annie’s vegan mac (with tempeh stirred in and topped with nutritional yeast and some salt, plus a hash brown patty on the side)…
Also, I survived a grocery trip to Giant today, and treated myself to this new sprouted bean dip; I’m excited to try it!

Hi everyone! I hope you’re all doing well! Zach and I usually host Easter for his folks and mine, but this year it was just the two of us. It was kind of sad not being able to have everyone over and cook a big spread, but I kept reminding myself that skipping this Easter was so that we could have many more together in the future.
On Sunday afternoon, Zach and I took a walk along another section of the Schuylkill River Trail, which also included these views along the Perkiomen Creek…
After our walk, we went home and I prepared a simple Easter dinner for us: I cooked the Tofurky ham roast that I’d picked up earlier in the year, made soup, and heated up some frozen collard greens…
My newest Easter decorations were a few pisanki (painted wooden eggs) that I’d found at an antique shop back in February. Side note: I really miss going out on adventures with friends; that’s another thing I’m looking forward to when all of this is over…
