Hi everyone! Zach and I got takeout from SuTao Cafe last Saturday for dinner; I got vegetable lo mein and fried tofu again!
On Sunday, I tried Upton’s Naturals pad see ew for my lunch; it was pretty good!
And I made another zucchini cake, this one with 2 tablespoons flax meal, which is now my new favorite!
And then my two big batch meals that got me through the week with all the leftovers: Vegetable noodle soup with gluten-free shells and soy curls…
And another yellow squash casserole (this time using Chao’s tomato cayenne slices), with more BBQ tempeh…
This little pumpkin grew all on its own in my garden!
And here’s the rest of the harvest from that day…

And last but not least, Rogue making biscuits on my belly!

Pennypack Creek, Good Food, and More!
Hi everyone! Last Saturday we took a masked/distanced walk with Zach’s family along the Pennypack Creek Trail; here are some pics I took!
The good food this week included some yummy crackers, a breakfast sandwich, veggie orzo with TVP, another zucchini cake (with blueberries and pecans), and a chili Mac ‘n Chao dinner with peas added and tortilla chips (which weren’t in the picture)…

Catching Up
Hi everyone!
I did this on Monday to celebrate the start of Pride Month. It’s the eight colors of the original pride flag designed by Gilbert Baker with what each color symbolized. Remember, Pride is a commemoration of the Stonewall Riots. If you can’t join the protests against the murder of George Floyd, please do what you can to spread the word and donate to bail funds to support those who are getting arrested.
Some food…
Our power went out Wednesday at noon and came back on around 12:30 a.m. Friday. Here are some no-cook meals I had during that time…
Our first hot food was takeout from Sutao Cafe, and it was amazing! I got the vegetable fried rice with the lemon chicken appetizer. Zach got the sweet & sour veggie meatballs again, so I didn’t take a pic.

Good Food, Plus Some Deer!
Hi everyone! For Sunday dinner, Zach and I split one of the frozen Blackbird pizzas that we’d gotten from Firefly.
For dinner last night, I made a breakfast sandwich using a roll, breakfast sausage, and cheese from Firefly, plus the VeganEgg and a hash brown patty. It was delicious!
For a snack, I had some of a chocolate pumpkin pie that I’d made earlier in the day. It was messy but good!
Here are some pictures from yesterday’s walk, plus the cute deer that we saw!
