Pumpkin Bread, Salad, and More!

Hi everyone, and happy November! This week I made myself some pumpkin bread, which was a perfect fall treat...


I also had plenty of salads: French blend with bacon bits and Daiya ranch...




And I tried this new Gardein bowl, which was delicious; I added a vegan egg roll from Wegmans...



And I made myself some vegetable orzo for lunch today with plenty of leftovers to enjoy during the week...


I had my last garden harvest yesterday...


And here's Rogue lounging cutely in the cat tower...

Fall is Here!

Hi everyone! My lunch for the first day of fall was Gardein’s chicken noodle soup with smashed avocado on a toasted bagel and everything seasoning! 


And my harvest that afternoon… 


Also this week, I made chicken noodle orzo, which was yummy… 


And little peanut butter rice burritos since they’d given me the taco size tortillas in my KWF grocery order instead of the burrito size, lol!

Last night we got takeout from SuTao Cafe for dinner; I got vegetable fried rice with lemon chicken, and it was so, so good! I’m looking forward to the leftovers today! 


And for breakfast this morning, we tried these pumpkin spice waffles; they were a nice seasonal treat! 



I haven’t done much sketching for a while, but in between taking notes during a work call Thursday afternoon, I managed to sneak some sketches in… 



And Daisy just keeps bringing the cuteness; here’s another meditation snuggle…

Pennypack Creek, Good Food, and More!

Hi everyone! Last Saturday we took a masked/distanced walk with Zach’s family along the Pennypack Creek Trail; here are some pics I took! 






The good food this week included some yummy crackers, a breakfast sandwich, veggie orzo with TVP, another zucchini cake (with blueberries and pecans), and a chili Mac ‘n Chao dinner with peas added and tortilla chips (which weren’t in the picture)…

MiniMoFo #1: Signature Dish

Hi everyone! For this prompt, I decided to make one of my favorite easy meals: vegetable orzo. 


It's something I made a lot when I first went vegan, and there's been at least three potlucks that I can remember making some variation of this as my contribution. I hadn't had vegetable orzo in a while, though, so it was fun and nostalgic to prepare it for this challenge. 



Just cook the orzo in vegetable broth, add the frozen veggies (in this case: broccoli, carrot, cauliflower) to steam for a few minutes at the end, and mix in a chopped-up Boca chick'n patty. Nice & simple!


Daisy, being a little creeper, asks, "Is there any for me?"

Lazy Tuesday Post

Hello on the 30th day of the Vegan Month of Food!  I hope everyone made it through the storm safely.  There was a lot of wind and rain here, but all we experienced was the power flickering on and off several times last night, no actual power outage.  I got a lot of reading done, snuggled with Mr. Boogie, watched a random old VHS movie with my mom and aunt, and chatted with my sister on the phone (which kept disconnecting on my end).  Today I have a lazy day post, but I will be making my pumpkin brownies tonight, so I am excited!

Vegetable Soup with Orzo


Heat up a can of Progresso Garden Vegetable Soup, along with about 1/3 cup orzo, in a sauce pan.  Serve with vegetable crackers.  Nice and simple, warm and filling.

Recipe: Squash & Orzo

Hello, everyone!  It's the third day of the Vegan Month of Food (Vegan MoFo), and today I have another simple recipe for you.  Squash always makes me think of fall, so what better vegetable to cook with during October?

Squash & Orzo


Ingredients:
--yellow squash
--green squash
--1/4 cup orzo
--1 cup vegetable broth
--vegetable flakes (my mix contains potatoes, onions, carrots, red and green bell peppers, celery, and parsley)
--garlic salt (optional; I've been using it to spice up the vegetable broth that I'm finishing up as it is rather plain)


Bring vegetable broth to a boil, add orzo, and lower heat.  Chop up the squash and add to the mix.  Add some vegetable flakes and garlic salt if desired.  When it's ready, serve with crackers and enjoy!


Coming soon to a blog near you (this one, in fact)--I finally looked around online for some ideas for my avocados, and I made myself some guacamole today, so I'll write about that soon.
