Burritos and More!

Hi everyone! I wanted to use up the rest of a bottle of BBQ sauce, so I made BBQ chicken (Wegman’s Don’t Be Chicken, sliced), corn, and rice burritos! 


I used the leftovers for a packed lunch later in the week… 


Zach and I went kayaking on Labor Day (on the Schuylkill River and Perkiomen Creek), and we ordered lunch/dinner from Moe’s when we were wrapping up. When we got home and unpacked our food, I couldn’t believe how many chips they’d given me with my burrito, so I had to take a pic, haha! 


I’ve also been trying to use up a container of VeganEgg. I kept trying for a coconut bacon and cheese (Follow Your Heart cheddar) omelette, but the first time I ended up with a delicious scrambled mess that I mixed in with smashed tater tots…


And the next time, it turned into an egg sandwich on a bagel…

More pole beans (and a couple cherry tomatoes) that I’ve harvested…

Takeout from Sutao Cafe!

Hi everyone! Dinner on Wednesday was a great treat – Sutao Cafe is now open for takeout, so Zach and I placed an order for pickup! Here’s what we got… 

Sweet & sour veggie meatballs, rice, wonton soup, vegetable lo mein, and chicken with broccoli

Everything was delicious, and we had lots of leftovers for the rest of the week! Obviously, I miss the buffet, but for now, takeout is perfect!

Cringer was a bit apprehensive during the thunderstorm last night, so we kept her company and offered cuddles and pets!

Good Food and Laurel Hill

Hi everyone! I’m still working through my stash of Annie’s vegan mac, so I used my second-to-last box for an easy lunch this weekend, adding in some tempeh and peppers and onions. I also added nutritional yeast and Cajun seasoning. 


Zach cooked dinner for us on Monday; he made vegan meatball sandwiches, and they were really good! He used Rudi’s wheat hot dog rolls, IKEA vegan meatballs, Vital Eats So-Cheezy sauce, and Chao cheese. 


On Sunday we met a friend at Laurel Hill Cemetery for a “social distance” walk; here are some pictures I took…

Using Up Stuff, Trail Pics!

Hi everyone! I used up the last of my Aldi oyster crackers in a chicken noodle soup cup, to which I’d also added some TVP…


I’d had a cup of barley that had been sitting around for a while, so I finally cooked it! I prepared the barley in four cups veg broth (Better than Bouillon) and used the last pepper from my Firefly grocery order, as well as some crumbled tempeh. It was super simple and delicious, and the leftovers have been great, too!



Last night I made another batch of Annie’s vegan mac, topping it with nutritional yeast and crispy onions!

More Pizza and Trail Pics!

Hi everyone! I really enjoyed the pizza I’d made on Friday, so I made another for lunch yesterday, this time with green peppers and Italian seasoning; it was really good! 



For dinner I made peanut butter rice and broccoli for a burrito!
