Burritos and More!

Hi everyone! I wanted to use up the rest of a bottle of BBQ sauce, so I made BBQ chicken (Wegman’s Don’t Be Chicken, sliced), corn, and rice burritos! 


I used the leftovers for a packed lunch later in the week… 


Zach and I went kayaking on Labor Day (on the Schuylkill River and Perkiomen Creek), and we ordered lunch/dinner from Moe’s when we were wrapping up. When we got home and unpacked our food, I couldn’t believe how many chips they’d given me with my burrito, so I had to take a pic, haha! 


I’ve also been trying to use up a container of VeganEgg. I kept trying for a coconut bacon and cheese (Follow Your Heart cheddar) omelette, but the first time I ended up with a delicious scrambled mess that I mixed in with smashed tater tots…


And the next time, it turned into an egg sandwich on a bagel…

More pole beans (and a couple cherry tomatoes) that I’ve harvested… 


And pictures from a walk in nature with a friend I hadn’t seen since the pandemic started… 





And Cringer keeping me company while I enjoy a meal…

SuTao Takeout and More Easy Meals!

Hi everyone! Last Sunday, we ordered takeout from SuTao Cafe and then went to Wilson Farm Park for a picnic! My sister Alena, Zach, and I found a nice tree and spread out under its shade to dig into a delicious distanced lunch!

My leftover rice (plus Boca chick’n) was an easy packed lunch on Monday… 


This week, I tried two of the frozen pot pies that Zach had found at Wegmans. They were both good, but I preferred the chik’n veggie… 





I finally got around to enjoying the lemon raspberry cheesecake I’d gotten from our last trip to Vegan Treats; it was so good! 



I also tried this soup, which was simple but really nice; I’ll be ordering it again from Firefly Cafe and Outpost… 



Random, but this mix of end-of-the-bag chips (blue corn tortilla and Doritos spicy sweet chili) made me think of Halloween (also, how is it September already?)… 


I tried this vegan mac & cheese that my mom had gotten for me; I had it with green beans and coconut bacon and it was delicious! 



And I finally had the Gardein chick’n noodl soup; it was great, even better than the chick’n & rice soup I’d tried first! So, that’s another thing I’ll be ordering from the outpost again! 



In garden news, I’ve been harvesting a ton of pole beans... 



And here is yet another picture of Daisy joining me to meditate; she got herself settled like this and then just hung out on my lap…

Easy Meals Plus Firefly Cafe!

Hi everyone! On Sunday, I made a big batch of fettuccine Alfredo (using a jar of Victoria Vegan Alfredo sauce, which was alright, but definitely needed more salt) and soy curls. The leftovers were great as quick lunches throughout the week! 


I also had some fun dinners with Field Roast mini corn dogs, tater tots, and veggies (pole beans, cucumbers) from my garden… 



And I made a small batch of rice crispy treats using mini Dandies marshmallows, and later, a plain zucchini bread… 



But the most fun food of the week was had today! I met up with my sister for a walk this morning; around lunchtime, we called to place an order for pickup at Firefly Cafe and Outpost. I got the burrito deluxe (with chips as the side); it was amazing but also super spicy! We ate outside at opposite ends of a picnic table at the park, and it was great to catch up with each other! 


I also picked up a small grocery order of some fun treats from the outpost! 


Here’s Daisy being her cute little self, settled in on my lap while I’m meditating…

Hooray for Fall!

Hi everyone! Monday was the autumnal equinox, so it’s officially fall now, hooray! I had some salted pumpkin seeds for a snack this week… 


Made some peanut butter noodles and veggies… 


Finally tried the carrot-cucumber salad from Food for Dissertating, which was super delicious… 

Served with white rice and Gardein’s mandarin orange crispy chick’n

And improvised a green bean casserole with pole beans from my garden. It turned out alright, but I used too much creamy mushroom soup, so I’ll probably cook some pasta tonight to add to the leftovers… 


Leela was not happy about going back to the vet so soon after her wellness exam, but she was having mouth pain and not eating as much as she usually does, so we brought her in yesterday morning. The vet found a sore in her mouth at the back of her upper left jaw, so she was given antibiotic and steroid injections.


We have to give her prednisolone for two weeks and she’s scheduled for a recheck on October 10, but she’s already eating a lot better and seems to be experiencing less discomfort, so we’re optimistic! She joined me for some meditating this morning… 


The praying mantis decided to switch it up, moving to hang out with my pepper plant and the kale…


And the little bun says hello…
