Hi everyone! On Sunday, I made a big batch of fettuccine Alfredo (using a jar of Victoria Vegan Alfredo sauce, which was alright, but definitely needed more salt) and soy curls. The leftovers were great as quick lunches throughout the week!
I also had some fun dinners with Field Roast mini corn dogs, tater tots, and veggies (pole beans, cucumbers) from my garden…
And I made a small batch of rice crispy treats using mini Dandies marshmallows, and later, a plain zucchini bread…
But the most fun food of the week was had today! I met up with my sister for a walk this morning; around lunchtime, we called to place an order for pickup at Firefly Cafe and Outpost. I got the burrito deluxe (with chips as the side); it was amazing but also super spicy! We ate outside at opposite ends of a picnic table at the park, and it was great to catch up with each other!
I also picked up a small grocery order of some fun treats from the outpost!
Here’s Daisy being her cute little self, settled in on my lap while I’m meditating…

Field Roast Mini Corn Dogs
Hi everyone! I haven’t done much exciting cooking this week; I was feeling kinda blah from what I’d thought were allergies after we got the furnace replaced (but more likely was a cold), so I mostly just did quick and easy meals like potato bowls, noodle bowls, canned soups, etc. Lunch today was another easy meal but something new: I finally saw the Field Roast mini corn dogs while grocery shopping, and they were on sale, so I had to grab a bag to try. I’m glad I did because they were really good! I had them with some Daiya cheezy mac (with sriracha) and added mustard for dipping.
Yesterday was an adventure; we lost power around 3 p.m. because of the storm (thankfully, it was restored by 9:30 p.m.). After braving the roads to get a warm dinner at Wegmans, Zach and I spent the rest of the power outage hunkered down in bed, but we had plenty of flashlights for reading (I started Bright Young Things by Scarlett Thomas). Leela was so excited to find us in bed already (she thought we’d decided to go to bed early) and snuggled in between us! Cringer cuddled with us briefly, but Daisy was too freaked out by the power being out to even think of joining us. After all of that, everyone’s especially happy for the sunshine today…
