Hello, 2021!

Hi everyone! I hope you are doing well! For New Year's Day dinner, I had a Field Roast celebration roast with kale and rice, which gave me some nice leftovers to enjoy the following days...

On Sunday, I made pumpkin bread using four different types of flour (buckwheat, oat, coconut, and almond) and these fun sprinkles that a friend got me for Christmas!

 

Mac & Chao with mushrooms and tater tots for an easy lunch on Tuesday...

And takeout from HipCityVeg for dinner...

On Thursday, I made a big batch of ziti with kale and alfredo sauce...

And yesterday, I made another pumpkin bread; I had a slice with some tea for snack last night...

Easy Meals Plus Firefly Cafe!

Hi everyone! On Sunday, I made a big batch of fettuccine Alfredo (using a jar of Victoria Vegan Alfredo sauce, which was alright, but definitely needed more salt) and soy curls. The leftovers were great as quick lunches throughout the week! 

I also had some fun dinners with Field Roast mini corn dogs, tater tots, and veggies (pole beans, cucumbers) from my garden… 

And I made a small batch of rice crispy treats using mini Dandies marshmallows, and later, a plain zucchini bread… 

But the most fun food of the week was had today! I met up with my sister for a walk this morning; around lunchtime, we called to place an order for pickup at Firefly Cafe and Outpost. I got the burrito deluxe (with chips as the side); it was amazing but also super spicy! We ate outside at opposite ends of a picnic table at the park, and it was great to catch up with each other! 

I also picked up a small grocery order of some fun treats from the outpost!

Yellow Squash Casserole and More!

Hi everyone, and happy August! I made a yellow squash casserole last Saturday, to which I added peas and some BBQ tempeh; it was really good, and I had some of the leftovers for my packed lunch on Monday, along with some broken blue corn tortilla chips for some added crunch… 

I also tried this Gardein breakfast bowl (yum!) for dinner one night, along with a salad using cucumbers from my garden and a ranch style dressing I made from tofu, which was just OK… 

I later improved the dressing by mixing it with the leftover hot sauce when I made Field Roast “fruffalo wings” for a super spicy salad…

Today’s included my first pole beans and cherry tomatoes of the year!

I had a shy little visitor while I worked on my garden this morning: A skittish stray kitty who we see around sometimes, dubbed by Zach “Sir Chins-a-Lot” for the black spot on their chin…

More Zucchini Cake, Packed Lunch, and Other Meals

Hi everyone! I hope you are doing well! Here’s another chocolate zucchini cake, this time with walnuts and frozen mixed berries…

And a peanut butter zucchini cake; I ran out of cocoa powder, so I used peanut butter powder instead, and (unintentionally) about a cup more zucchini than last time, lol!

Zach and I took another kayaking trip; here’s a picture of the tree I was waiting under before we started…

I packed another lunch this week, this time tater tots with grilled cheese…

I made veggie orzo with TVP, which was delicious and had lots of leftovers…

And a Field Roast frankfurter with tater tots and broccoli with everything seasoning…

And finally, another takeout dinner from SuTao Cafe!
