Hi everyone! On Sunday morning, we hung out with a friend on a masked walk around Cedar Creek Park in Allentown, and on the way home, we stopped at Vegan Treats! I got the chicken and waffle donut, which ended up being my lunch, hehe!
I also got the raspberry white chocolate brownie, which was a nice treat as well!
I tried these vegetable dumplings from Wegmans; they were alright, but I’m not in a rush to get them again. I had them in miso soup with a buttered everything-seasoned bagel.
I made a big batch of chicken noodle soup this week, and I’m still working through the leftovers, which have now absorbed all the broth, lol!
I also finally tried the Loma Linda chipotle bowl that Zach had gotten for me a while ago; it was good but incredibly spicy!
And of course I’m already planning ahead for next year’s garden, so I ordered some seeds from High Mowing Organic Seeds – three different types of pumpkin, as well as Brussels sprouts and a pollinator mix! I was so excited when they arrived in the mail!
Finally, here’s a cute little creepin’ Cringer, peeking out from beneath one of the kitchen window curtains…

Vegan Treats, Yummy Meals, and Kitties!
Hi everyone! NaNoWriMo is going well for me so far; I’ve managed to stick to my 2,000 words/day goal, even though some days the writing has been a bit slow-going. And I still need to get today’s writing done, so let’s get to the food, shall we? On Sunday we stopped at Vegan Treats; I got the nutella cheesecake, and it was really good!
On Tuesday, I prepared a bag of the Light ’n Fluffy macaroni dumpling noodles and tossed in a bunch of kale near the end. After draining out the water from the pasta and kale, I added the dressing ingredients for the kale salad that I first tried during Vegan MoFo, and it made for a lovely dish with some great leftovers for the rest of the week.
Last night for dinner I needed something simple, so I tried the ramen soup cup from Trader Joe’s; I added in some broccoli (and later, after the picture, some chopped-up Boca chik’n as well), and it was nice! I also enjoyed the everything but the bagel seasoning on a toasted vegan-buttered bagel.
Leela got nice and comfy to meditate with me this morning…
And here’s Rogue being a snuggly little sweetheart…

Three Delicious Cups/Bowls
Hello there! Today I'm joining in on the first Vegan MoFo Off-Season Community link-up. For the topic of "PICK 3," I've decided to share three cups/bowls I've enjoyed recently.
First up is a miso soup cup, to which I added the last of my Old Bay seasoned tofu...

Miso Soup
Hello everyone! I hope your January has been going well! I love that it's been snowing so much, and after a long, snowy drive with Zach today, I decided to make something simple for dinner.
I've been wanting to try miso soup for a while, so when I found some instant miso soup on sale, I decided to give it a try (I chose the lower sodium one).
Tonight I had it with a grilled cheese sandwich (I used the shredded Daiya instead of the slices this time).
The Miso-Cup is super simple to make (just empty the packet into a bowl and pour in one cup of hot water). On its own, it's good, though nothing too exciting. (Mystery, however, seemed fascinated by it; she kept trying to get to it while I ate!)
I still have a couple packets left, so I'm going to experiment with ingredients to make it a more filling meal. But for now, here's some more pictures of the grilled cheese, yum!
Mystery has been very cuddly lately, pinning me down for hours at a time at night, curled up on my lap, so I have been getting a good amount of reading done. I'm on my third book of this year, about 2/3 of the way through Dominion: The Power of Man, the Suffering of Animals, and the Call to Mercy by Matthew Scully. Has anyone else read it? I'm enjoying it so far, though it is a bit dated since it was published over 10 years ago.
