Peanut Butter Chocolate Chip Cookie Dough Bars

Hello everyone! The newest recipe I tried out was the Peanut Butter Chocolate Chip Cookie Dough Bars from Tofu for Thought. 

My changes were to use soy milk instead of almond milk (and 1 T more of it) and only ¼ cup of chocolate chips since that's all I had on hand. In the future, I think I'll try a different oil; the melted coconut oil hardened up once I added the soy milk, so there were little chunks of coconut oil throughout the bars, haha! That said, these are so delicious! I could certainly see going ahead and making actual cookies from this recipe, but eating cookie dough bars is infinitely more fun! 

I'll leave you with some cuteness tonight... First up are Cringer and Daisy, the sweetest little cuddle buddies. 

And then of course we have Leela and Buttons; their version of “cuddling” is sharing the sunshine with a good few inches in between!

Baked Vegan Mozzarella Sticks

Hello everyone! I decided to try to make baked mozzarella sticks this week, but the real inspiration for doing this was I had a dream that I made BBQ mozzarella sticks – which was probably inspired by me having made the General Tso's tofu – and I really wanted to try it out.

I sliced up a Follow Your Heart vegan mozzarella block, dunked the pieces in a mix of water and whole wheat flour, then breadcrumbs, and baked them for 10 minutes. I then dunked some in BBQ sauce but left most of them plain – in case it turned out to be a bad idea – and then put them all back in for another five minutes. Zach thought the sauce was a gross idea, so he just had the regular ones, dipping them in pasta sauce. I tried both, but I absolutely loved the BBQ ones. 

I made another batch of plain mozzarella sticks today, this time going with Zach's suggestion of brushing over a bit of melted Earth Balance before baking them another five minutes. They turned out well, but I used a thinner tray this time and several of the mozzarella sticks burst open with cheese. Whoops. All in all,
Zach liked this version best.

General Tso's Tofu

Hello everyone! This week I decided to try a variation on the General Tso's Vegan Chik'n, using tofu instead of cauliflower. It worked well, with nice uniformly-sized pieces, haha, and tasted really good. Overall, however, I think I still prefer using cauliflower. There's just something about it that makes the dish so perfect!

(An Attempt at) Vegan Mounds Bars

Hello everyone! Yesterday I tried making vegan Mounds/Bounty bars using this recipe from Floral Frosting. 

The coconut bars came together easily, but the whole dipping-in-chocolate part only worked for the first few (the next started falling apart in the chocolate). So, after that, I tried dipping just the ends and also spooning/pouring out the chocolate on top. I even got “fancy” (by accident) and crumbled chocolate on top of some for decoration, haha.

For all that they didn't turn out quite right, they were delicious and fun to prepare, so I definitely want to have another go at making these sometime.
