Baked Ziti

Hello everyone! This week I tried vegan baked ziti, one of the recipes from my random cookbook. It was a hand-written recipe, so I wasn't exactly sure where it was from, but after a quick bit of sleuthing online, I found the recipe here on VegWeb. 

My changes were to use 4 tsp dried parsley, 1 cup (instead of ¼ cup) vegan mozzarella for the topping, and no breadcrumbs. It turned out really well, very delicious indeed! The recipe says it serves 4, but it's definitely more than that, so if I make this recipe again, I'll halve it. Also, I'll skip the tofu next time; I was never much of a ricotta fan before going vegan, and I didn't particularly care for this vegan ricotta. Overall, though, this recipe gets a thumbs up from me!

Served with a “garlic bread” bagel.

Ranch Flavored Roasted Chickpeas

Hi everyone! This week I tried out another roasted chickpeas recipe, a ranch-flavored one from Fo Reals Life. I've had it bookmarked for a while, and I'm so glad I finally got around to it! These roasted chickpeas turned out great; they're nice to snack on, but I especially like them as a salad topping.

Rosemary and Sage Pretzels

Hi everyone! This week I made another House Vegan recipe, Homemade Rosemary, Sage and Sea Salt Pretzels. After I kneaded the dough together, Zach helped by separating the dough and doing the simmering while I shaped the pretzels. The last few turned out the most pretzel-y, so practice makes perfect and all that fun stuff. Regardless of the odd shapes, these were absolutely delicious, and I'll definitely try making them again!

Here's Buttons and Cringer lounging together on the top of the stairs; I'd never seen them do this before, so I made sure to take a picture!

Vegetable Quesadilla at the Great American Pub

Hi everyone! Quick post tonight because I am super worn out from today's Chester County Pride Festival at Reeves Park in Phoenixville! So much walking and so much sun, lots of great music & art (& rescue dogs!!!!), so many happy, lovely people, just an awesome day all around!

After the festivities, Zach and I decided to finally visit the Great American Pub on Bridge Street to check out their vegan menu... 

...and of course sit at one of the outdoor “glider” tables, which was really cool...

I decided on the vegetable quesadilla (Daiya mozzarella, portobello mushrooms, roasted peppers, asparagus, and spinach, served with guacamole and salsa), and Zach got the same. It was so good and super filling, so we brought home leftovers!
Next time, I'm planning to try the carrot hotdog!
