Hi everyone! This week I tried a new vegan bacon recipe, inspired by the parsnip bacon post on Lisa’s Project: Vegan. I used canola oil instead of sunflower oil, and liquid smoke and a sprinkling of salt instead of smoked salt.
The parsnip bacon had a very nice crunch to it, and even though it mostly tasted like a parsnip chip to me, I still really enjoyed it in a bagel BLT (I also crumbled up some of the leftovers and added them like bacon bits to a salad, which was pretty good, too).
Here’s a photo of Daisy...

Peace. :)
Parsnip bacon is new to me! I love parsnips though, so would be keen to try it.
ReplyDeleteBeautiful drawing of a beautiful kitty!
Thanks, Susan! I'd been a bit skeptical since I'm not that much of a parsnip fan, but this was a fun & tasty way to cook them! :)
DeleteHow creative to use parsnip! Your sandwich looks so good and what a great drawing of sweet Daisy!! You are so talented!
ReplyDeleteThank you, Sarah! The sandwich was really good; I actually made another batch of parsnip bacon this week so I could have the BLT again, haha! :)
