Hi everyone! This weekend was filled with lots of great vegan food – first was a trip to Vegan Treats! I went with Zach and one of our friends – there was a lovely selection as always…
I was most excited about this glazed donut, which I ate in the car right away!
I also got the triple berry cheesecake and a cream cheese chocolate cupcake…
And Zach got the cookies & cream cake…
After that, we went to Riverview Park in Easton and walked to the dam…
And then headed over to New Jersey to check out Eureka for lunch!
I ordered the “Sumthin to Eat” sandwich, which is a BLT, and a small mac & cheeze; both were delicious!
And then on Sunday, I went with my friend to V Marks the Shop; she’d heard that Conscious Cultures Creamery was doing a pop-up, so we decided to check it out. I’m glad we did; they were making these amazing Beyond Meat sliders with pimento cheese and onion dip!
After that, we went to Pho Ha; I got the vegan pho, and it was really good!

Soy Curl Bacon (Protest Kitchen)
Hi everyone! Yesterday I made the soy curl bacon from Protest Kitchen. It was another simple recipe and it turned out really good; the smoked paprika was a nice touch. It was great in a BLT, and I’m sure I’ll make it again sometime soon, especially since I found a local-ish place that carries Butler soy curls: Firefly Cafe and Outpost in Boyertown, PA.

Parsnip Bacon
Hi everyone! This week I tried a new vegan bacon recipe, inspired by the parsnip bacon post on Lisa’s Project: Vegan. I used canola oil instead of sunflower oil, and liquid smoke and a sprinkling of salt instead of smoked salt.
The parsnip bacon had a very nice crunch to it, and even though it mostly tasted like a parsnip chip to me, I still really enjoyed it in a bagel BLT (I also crumbled up some of the leftovers and added them like bacon bits to a salad, which was pretty good, too).

...that inspired a sketch earlier this month...
