Hi everyone! This week I had lots of potato meals and finished up my garden carrots…
I also tried to embrace the cooler weather with some mashed potatoes and lightly-steamed green beans, which were a gift from another neighbor…
Zach and I finally found some Miyoko’s VeganMozz, so last night, we gave it a try on pizza bagels! When I first pulled them out of the oven, it didn’t look like the cheese had melted at all, but pressing down lightly with a fork spread the cheese out nicely. And of course, it was delicious!
Oh, and I can’t forget to share the goodies I got from Vegan Treats at Bethlehem VegFest last week! The lemon blueberry cheesecake was absolutely amazing, and I warmed up the sticky bun and had it for breakfast the next day; yum!

The Animals!
Hello everyone! Today's prompt is "Honor a human or non human animal who inspires your veganism." For me, veganism will always be about the animals, and visiting sanctuaries is my favorite way to connect with the lucky ones who are no longer exploited by humans. Simply being in their presence is a re-charging experience, and I treasure being able to visit such incredible individuals and learn their stories. Here are some of the many photos I've taken over the years.

What's a MoFo post without a food pic, so here's the pizza bagels I had for dinner tonight (I used a mix of Daiya cheddar and Follow Your Heart mozzarella).
And of course, having Leela and Buttons in my life is quite the lovely, inspiring thing as well.

Pizza Bagels
Hello
on the fifth day of the Vegan Month of Food! Did you know that today
is National Cheese Pizza Day? I had no idea until I saw it mentioned by a fellow Vegan MoFo
blogger, Melissa of New Orleans in Green (see Happy National Cheese(less) Pizza Day!).
Today's post, therefore, features vegan cheese pizza in the form
of...
Pizza
Bagels
Ingredients:
--plain
bagel, sliced open
--tomato
sauce
--spinach,
chopped
--shredded
vegan cheese (I used Daiya, both mozzarella and cheddar)
--garlic
salt
Place
the open bagel halves on a baking sheet. Add tomato sauce, spreading
evenly. Layer on some spinach, add the cheese, give a quick shake of
some garlic salt, and put in the oven at 350°F for about 10 minutes
or until the cheese is melted. Remove from oven and let cool slightly
before serving. Enjoy!
This
is a super quick & easy meal to make. I like to have them with
potato chips and a pickle on the side.
Zach likes his pizza bagels
without the spinach and with a sprinkle of salt instead of garlic
salt.
