Buttons is Home, then a Veggie Wrap

Hi everyone! We picked up Buttons last night; her procedure went well yesterday, but we won't get the results for a few days. She looks a bit tough, silly, and cute all at once since she's sporting so many shaved patches (two on each side, one on each front leg, and on her belly) from her recent ordeals at the vet. I'm just so relieved to have her home now, and she seems to be settling in well. The spot she liked the best last night was a cardboard box with her favorite purple blanket in it... 


Zach slept in the room with her last night, and I've been hanging out with her today. So far, she's been enjoying the sunshine...



...sleeping some more in her box nest...



...getting out her frustrations on a new scratching board...



...and lounging with me on the floor...



I took a quick break from hanging out with Buttons to make my lunch for today's Vegan MoFo prompt ("Catering"). The last wedding Zach & I went to was great at making sure the vegans in attendance were taken care of. There was a whole table arranged with a variety of vegan food, all labeled with their ingredients. In addition to salad and other appetizers, there were three different types of wraps; I had two. One had seitan and was really good, but I forget the other ingredients, haha. Maybe avocado? I'm not sure. The other I remember having roasted red peppers and mushrooms, so I decided to recreate that simple but tasty wrap by doing a quick saute of some shiitake mushrooms and red pepper slices. Combine with lettuce in a flour tortilla, wrap it up, and enjoy for a nice, light lunch.

And with how much I've been talking about Buttons, here's a pic of Cringer; she doesn't want anyone to forget how cute and dramatic she can be...

New Food in January

Hello everyone! January seemed to fly by pretty quickly, so I figured I would do a post with some of the fun new foods I've tried this month.

First up are two Amy's products... The Indian samosa wrap was good, but I much preferred the bean & rice burrito.




Next we have some fancy vegan cheeses. My brother-in-law Ben suggested we try a Miyoko's cheese when he visited me and Zach, so we stopped by the health food store and decided on the double cream garlic herb. We had it with crackers, and it was absolutely amazing! I also tried it as a spread on a toasted bagel, and I didn't even need to use that much of it. Yum all around. 




So, needless to say, now Zach and I want to try all the fancy vegan cheeses haha! The next one was the Treeline herb-garlic flavor, for comparison purposes. Overall, we much preferred Miyoko's, but I did appreciate that this Treeline one came in a plastic container with a lid (less mess, more convenient) instead of a packet that had to be cut open. 




And now, last but not least, two new Gardein items that I tried... I really liked the turk'y cutlets, especially since they came with gravy; they were perfect with mashed potatoes.


 
The pocket meal, on the other hand, wasn't that great (but it was buy one, get one free so I'm not complaining too much). I guess it just seemed odd that the outer layer was breaded chick'n, like that's not really how I would picture a “pocket meal” haha. The filling was good, though.

Thai Peanut Sauce

This week's new recipe was the Thai peanut sauce from Quick and Easy Vegan Comfort Food


I decided to try this one because my normal “peanut sauce” is just peanut butter, soy sauce (well, Bragg liquid aminos), and water, so nothing too exciting or fancy.



Overall, this was an easy recipe to put together, except for mixing the peanut butter in with everything else (the sauce still had some lumps). Note: I left out the vegetable stock and sriracha. 



I tried the sauce in a wrap of rice, broccoli, and carrots. The sauce was good, but I think a little too thin for my liking, so if I make it again, I might adjust the amount of coconut milk and/or leave out the water. And I think I'll try heating the sauce next time, which should help the peanut butter mix together more easily. 



But until then, I have a bunch of Thai peanut sauce to use up, and the next dish I tried it in was whole wheat spaghetti with green beans and some crushed red pepper flakes.
