Wrapping up 2020

Hi everyone! Figured I'd get in one last post before the new year, so here's some of what I've been eating. It's mostly simple meals since I've been trying to use stuff up at home, but first are these sweet potato fries that I got as part of a grocery order from Kimberton Whole Foods; they were good, but so spicy!


 More mac & Chao with green beans...


A burrito with rice, pinto beans, crushed sweet spicy chili Doritos, and guacamole...


A salad with crushed root veggie chips for some added crunch...

Here's hoping for better times in (and out of) the kitchen in 2021. Who knows, maybe I'll actually break into some of the cookbooks I've gotten this year...

Lots of Good Food Plus Firefly Cafe!

Hi everyone! I tried Amy's vegan rice mac & cheeze, and it was pretty good!



I also tried the Kite Hill mushroom ravioli, which was great!



And for a fun dinner, I made a Gardein skillet meal with vegan egg rolls from Wegmans; it was quite delicious! 




Yesterday I met up with my mom and my sister for a walk and we got lunch from Firefly Cafe. I ordered the grilled cheese with avocado and also picked up a small grocery order; this Vegan Treats pumpkin donut was one of the goodies!

New Food in January

Hello everyone! January seemed to fly by pretty quickly, so I figured I would do a post with some of the fun new foods I've tried this month.

First up are two Amy's products... The Indian samosa wrap was good, but I much preferred the bean & rice burrito.




Next we have some fancy vegan cheeses. My brother-in-law Ben suggested we try a Miyoko's cheese when he visited me and Zach, so we stopped by the health food store and decided on the double cream garlic herb. We had it with crackers, and it was absolutely amazing! I also tried it as a spread on a toasted bagel, and I didn't even need to use that much of it. Yum all around. 




So, needless to say, now Zach and I want to try all the fancy vegan cheeses haha! The next one was the Treeline herb-garlic flavor, for comparison purposes. Overall, we much preferred Miyoko's, but I did appreciate that this Treeline one came in a plastic container with a lid (less mess, more convenient) instead of a packet that had to be cut open. 




And now, last but not least, two new Gardein items that I tried... I really liked the turk'y cutlets, especially since they came with gravy; they were perfect with mashed potatoes.


 
The pocket meal, on the other hand, wasn't that great (but it was buy one, get one free so I'm not complaining too much). I guess it just seemed odd that the outer layer was breaded chick'n, like that's not really how I would picture a “pocket meal” haha. The filling was good, though.

Amy's Veggie Sausage and Hash Browns

This week's exciting find was Amy's veggie sausages at Target! I made them with hash browns and toast, yum! 


Hash Browns: Wash and grate one medium red potato. Rinse the grated potato in cold water, drain, rinse again, drain. Squeeze out as much water as possible. Add vegan butter to a pan on medium heat. Add the grated potato, as well as salt, pepper, paprika, and cayenne pepper. Cook and stir until desired crispiness. (Don't forget to add some ketchup on the side!) 


Buttons has sprawled out close to Leela several times since last week. This picture was taken after she walked over, plopped herself down as close as she felt Leela would be OK with, and then stretched to look at her. (Leela, meanwhile, just kept snoring away.)
