Hi everyone! On Sunday, I met up with a friend for a social distance hangout/picnic in Valley Forge National Historical Park. We found a shady spot above Valley Creek and settled in to have some snacks and catch up…
I tried these baked graham bites that Zach had gotten for me at Wegmans, and they were pretty good!
I also made more zucchini cakes this week, of course! This one with whole wheat flour, peanut butter powder, frozen mixed berries, and walnuts…
And this one that I made yesterday, which I think was my favorite version so far. If I remember the measurements correctly, I used 1 cup whole wheat flour, 1/3 cup peanut butter powder, 1 tsp baking soda, ½ tsp baking powder, ¼ tsp salt, 1 tsp cinnamon, ½ cup brown sugar, ½ cup applesauce, 1 tsp vanilla, 2 cups zucchini, and 1 cup frozen mixed berries, baking the cake for 55 minutes.
My packed lunch this week was a burrito with rice, black beans, Cajun seasoning, and guacamole…
I had the last of the rice, beans, and guacamole in a bowl with blue corn tortilla chips for lunch yesterday…

Guacamole
Hello on the 4th day of the Vegan Month of Food! I mentioned making guacamole yesterday, so here's my post about it as promised. I used this Basic Guacamole Recipe as a starting point.

However, I am very stubborn and rarely follow recipes exactly, and this was no exception. I made it without the lemon juice (since I didn't have any), just used garlic salt instead of garlic powder and salt, and left out the optional cayenne, etc.

Guacamole
So, the ingredients I used were as follows:
--1 avocado
--1/4 cup salsa
--1/4 tsp garlic salt
Cut open the avocado and scoop out the "meat" of it, mashing it up in a bowl, then add the salsa and garlic salt, mix together, and enjoy your guacamole with tortilla chips, potato chips, or any other snacks you like to have with a dip.
Well, I'm off to do some cleaning and straightening up around the house; my Uncle Mark is stopping by early before the camping trip he's going on with my dad and his friends this weekend, so we'll be talking about recipes and about writing, and hopefully (if it's dry enough) Zach and I will be able to take him disc-golfing.
