Hi everyone! This week I tried the potato and cashew Alfredo from My cat loves Daiya! It came together really easily, and I ladled some of it over whole-wheat linguine. Yum!
And today I used some of the leftover Alfredo sauce to make a mac & cheese with celery (and sriracha on top); it was really good!

Mushroom Gravy
Hi everyone! This week I made mushroom gravy; here’s my recipe...
Ingredients:
2 cups sliced mushrooms (I used baby bella)
1 ½ tablespoons canola oil
2 tablespoons whole wheat flour
2 tablespoons nutritional yeast
¼ teaspoon salt
¼ teaspoon pepper
½ cup water
½ teaspoon liquid smoke
Directions:
Saute the mushrooms with the canola oil in a saucepan over medium heat. Once the mushrooms have softened, add the flour, nutritional yeast, salt, and pepper. Stir to combine, then add ¼ cup water, stir, then add the final ¼ cup water. Continue stirring, add the liquid smoke, and then blend the gravy. Makes 1 cup gravy.

January MiniMoFo: Chickpea Noodle Soup (VegNews)
Hi everyone, and Happy New Year! January’s MiniMoFo prompt is “Creating Warmth,” so I made the chickpea noodle soup from the most recent VegNews. (My modifications: I used vegan chicken broth instead of the water and miso paste, shallots instead of the onion, and dried parsley instead of fresh. I also left out the caraway seeds.) It came together really well, and was perfect for the snowy, blustery day we had on Thursday. The leftovers were really good, too!
