Vegan MoFo 2018: Kitchen Tour

Hi everyone! For the last day of Vegan MoFo, I decided to follow the prompt: “Kitchen Tour – Now the month is concluding, show us where the magic has been happening!” There have been kitchen tour prompts in the past (2015, 2017), but this is one that I don’t mind repeating because it’s so fun, and also gives me the push to clean and organize after a busy month of trying so many new recipes!

Cringer’s prowling the counter.

Shut Down Berks! is the rallying cry of the coalition trying to shut down the immigrant family detention center in Berks County, PA. Zach and I have attended two vigils, but we didn’t make it to the one today.

My little collection of vegan cookbooks

And here’s the awesome new oven mitt that Zach surprised me with; I love it!

I always feel the need to include some food in a Vegan MoFo post, so here’s a what-I-ate from the past 24 hours…

Last night’s snack, the cinnamon roll donut from Vegan Treats

Breakfast, oatmeal with peanut butter and jelly (as suggested by The Student-turned-Doctor – delicious, thank you!)

Lunch, leftover macaroni with butternut squash and avocado

Dinner, leftover “Cook It For Your Love” sausage saute

Thanks to everyone who read and commented this month; when it’s not Vegan MoFo, I try to do one post a week, so be sure to stick around! Next up for me is Inktober, which starts tomorrow; maybe I’ll share some of those sketches here.

Cringer says if Daisy’s going to steal the box, she’ll preemptively steal the cat tower from her…

And here’s a photoset of Leela to close out the month…

Peace. :)

Bookmarked Recipe: “Cook It For Your Love” Sausage Saute (Fake Meat & True Love)

Hi everyone! Today I made the “Cook It For Your Love” sausage saute from Fake Meat & True Love (Vegan MoFo 2017). This was a fun one because it included a few new-to-me things – polenta and patty pan squash, as well as the Krakow Nights seasoning from Penzeys Spices, which I used on broccoli instead of broccolini. I wasn’t as much a fan of the polenta as I’d hoped to be, but overall it was still a great meal!

Last night, Cringer and Daisy had an epic battle for the box (even though there are plenty of boxes, they always want the one the other is in). Daisy, to be fair, had been in this one first. After Cringer stole it from her, I found Daisy looming over, plotting to steal it back…

She jumped down, and it soon turned to fisticuffs…

And Daisy stood up and dared Cringer to try anything further…

And Cringer left…

A victorious Daisy…

Peace. :)

Bookmarked Recipe: Macaroni With Butternut Squash & Avocado (AfroVeganChick)

Hi everyone! Today I made the macaroni with butternut squash & avocado from AfroVeganChick (Vegan MoFo 2017), and it was so, so good; I loved the combination of butternut squash and avocado!

(Topping changes: I used Phoney Baloney’s coconut bacon and left out the basil leaves.)

Here’s a big yawn from Leela!

Peace. :)
