Hi everyone! I hope you are doing well! I had a lot of easy meals this week, so I’ll share some of them here! First up is the Loma Linda Pad Thai, which was good, but really spicy!
Then I tried Gardein’s chick’n & rice soup; I really enjoyed it!
Another salad with cucumbers and cherry tomatoes from my garden…
And finally, the Loma Linda Italian Bolognese, which was still rather spicy, but a bit less so than the Chipotle Bowl or Pad Thai, lol!
And today’s fun treat was speculoos and chocolate marshmallow soft serve ice cream from Vegan Treats! It was so good, but was melting really fast, so I had to hurry and eat it before it overflowed the cup!
On the drive home, we passed by parts of the old Bethlehem Steel plant; these are the quick pics I was able to get…

Vegan Treats and Other Good Stuff!
Hi everyone! On Sunday morning, we hung out with a friend on a masked walk around Cedar Creek Park in Allentown, and on the way home, we stopped at Vegan Treats! I got the chicken and waffle donut, which ended up being my lunch, hehe!
I also got the raspberry white chocolate brownie, which was a nice treat as well!
I tried these vegetable dumplings from Wegmans; they were alright, but I’m not in a rush to get them again. I had them in miso soup with a buttered everything-seasoned bagel.
I made a big batch of chicken noodle soup this week, and I’m still working through the leftovers, which have now absorbed all the broth, lol!
I also finally tried the Loma Linda chipotle bowl that Zach had gotten for me a while ago; it was good but incredibly spicy!
And of course I’m already planning ahead for next year’s garden, so I ordered some seeds from High Mowing Organic Seeds – three different types of pumpkin, as well as Brussels sprouts and a pollinator mix! I was so excited when they arrived in the mail!
Finally, here’s a cute little creepin’ Cringer, peeking out from beneath one of the kitchen window curtains…

Easy Meals Plus Firefly Cafe!
Hi everyone! On Sunday, I made a big batch of fettuccine Alfredo (using a jar of Victoria Vegan Alfredo sauce, which was alright, but definitely needed more salt) and soy curls. The leftovers were great as quick lunches throughout the week!
I also had some fun dinners with Field Roast mini corn dogs, tater tots, and veggies (pole beans, cucumbers) from my garden…
And I made a small batch of rice crispy treats using mini Dandies marshmallows, and later, a plain zucchini bread…
But the most fun food of the week was had today! I met up with my sister for a walk this morning; around lunchtime, we called to place an order for pickup at Firefly Cafe and Outpost. I got the burrito deluxe (with chips as the side); it was amazing but also super spicy! We ate outside at opposite ends of a picnic table at the park, and it was great to catch up with each other!
I also picked up a small grocery order of some fun treats from the outpost!
