Garlic-Herb Pita Toasts (The Mediterranean Vegan Kitchen)

Hi everyone! Today's Vegan MoFo prompt is "Fancy," so I thought I'd try making an appetizer from The Mediterranean Vegan Kitchen. The garlic-herb pita toasts were easy and super quick to make; they were a tasty accompaniment to some leftover scalloped potatoes.


Here's my Inktober sketch; pay no attention to the randomly missing eighth piece of pita lol!

Sloppy Joe Burrito

Hello on the 21st day of the Vegan Month of Food!  Today I have a nice and simple recipe utilizing leftovers from previous posts Sloppy Joes and Another Lazy Saturday Post.

Sloppy Joe Burrito


Ingredients:
--about 1/2 cup prepared sloppy joe mix
--pita
--leftover snap peas and mushrooms


Re-heat the sloppy joe mix on the pita.  Re-heat leftover snap peas and mushrooms separately, then add on top of the sloppy joe mix.  Fold up the pita to make a burrito.  Enjoy with tortilla chips.


I liked this leftover meal a lot, especially because the snap peas and mushrooms were actually way more enjoyable this time around, as part of the burrito.  It's definitely a recipe to keep in mind when I have leftover sloppy joe mix.

Yellow Rice and Vegetables on Pita

Hello on the 18th day of the Vegan Month of Food!  Today I have a post about a quick and easy lunch, the same general idea as a previous post with brown rice, but I felt that this was a colorful enough meal to include anyway.

Yellow Rice and Vegetables on Pita


Ingredients:
--Carolina Yellow Rice mix
--1 T olive oil or vegan margarine
--1 2/3 cup water
--carrots 
--snow peas
--pita


Prepare the yellow rice according to package directions.  Add in chopped carrots and snow peas.  Toast pita lightly and top with rice.  Serve with a side salad of mixed greens.
